For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it’s thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Tap at The Cove in Baton Rouge. Smells of armpit. Really strong aroma. Fruity taste and smooth. Probably the best saison I ever had.

I really enjoyed this, especially compared to the prior saison I had. White head. Big floral aroma with good dimensionality. Lemongrass appears. Good body, sustains itself well. Very good. Bottle.

Hazy, straw yellow body with a white cap. Aromas of grass, yeast, citrus. Cracked pepper and grain with floral notes. Light acetic character, finishing dry. Active carbonation with a touch of lemon tartness. Pretty good.

Hazy orange-yellow with small white head. Aroma is yeasty, lemon, grapefruit-- overall fruity. Taste was totally unexpected-- was anticipating a sweetness, like a Belgian, but instead it was mildly sour. Very subtle hops in the finish. Palate is wonderfully refreshing-- light and lots of carbonation, but still full bodied. In my mouth the aroma + taste morphs into... corn tortillas. Yes, you heard me right. And I like it!

(bottle) Pours a hazy light yellow color with a large white head and plenty of lacing. Smells of baked bread, peppercorn, skunky basil, light funk, grapefruit (?), and light bubblegum (not juicy fruit) in the background. It’s all a little understated. Flavor contains a more prominent hit of bubblegum, basil, mineral water, lemon, with bread and funk towards the finish. Perhaps just a peek of mint towards the end, as there’s a faint cooling sensation that crops up after drinking. Mouthfeel is medium and carbonation is lively. This would make for a good summer beer.

12 ounce bottle poured into a brandy snifter. Pours a hazy yellow with a white head of foam that starts small, but expands. The aroma has must, earth, floral, and funky notes. The taste is sweet and flowery with a bit of earthy funk. Really pleasant. Medium body and pretty high carbonation.

Nice aroma of fruit, pepper, and musty yeast. Huge white fluffy head with a dusty straw color. Smooth sweet malt up front. Peppery spiciness comes in next. Balances very well. Lively mouth feel with a refreshing finish. Excellent.

Bottle from The Barrel in Charleston. Super, super interesting. Pours a hazy, dirty not-quite-golden with a short lived white head. Earth, yeast, green grape and grain all upfront. Nice citrus notes and green apple in the back keep in from being too sweet. Finishes really crisp. Nice and funky. Eminently enjoyable.

Hazy body, frothy head, showing medium-bodied wheat, bread and barnyard notes above subtle citrus flavors. Lingers with dry hops through the medium finish.
