Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, itís hard to make.

Pours hazy straw yellow with a huge white head, some lacing. Aroma of wheat, corriander and mild smokiness. Taste is grainy, wheat, citrus, mild tartness, Lenin and some saltiness

Slightly hazy pale straw pour with a white head. Aroma is wheat, with some coriander and lemon peel. Taste is lightly tart lemon, wheat, and a bit of funk. Light body. Easy drinking.

Poured from a 12 ounce bottle. Pours straw in color with a bright white head. Notes of citrus, apple, mineral rich. A very refreshing beer.

Strong coriander, slight funk note on the aroma. Taste is too much spice, very slightly lacto sour with lingering. Slick, Cloying, not a good finish, just hangs in the mouth with clove. Will not be getting this again.

Mmm they nailed this. Looks pretty unappetizing and reading the label I was worried I was getting a wit. Yikes. But no, itís a gose. Salty and sour and lots going on. Nicely done.

12 ounce bottle. Give this one a shake before pouring. Cloudy pale yellow color with a small creamy white head. Faint yeasty nose with a hint of Meyer lemon. Complex flavors abound here. Tangy yeast, barnyard funk, lemongrass, lemon curd and hay come to mind. Soft on the palate and easily drinkable, but donít quaff this. Sip it and savor it. The finish is reminiscent of a slightly salty lemon drop. Long lingering sour citrus aftertaste flashes a subtle hint of lactobacillus. Nicely done!

Bottle from St Gambrinus, Brooklyn. It pours cloudy gold with a small white head. The nose is earthy, cracker, minerals, hay, barnyard, vegetables and smoked cheese. The taste is crisp, earthy, funky, musty, minerals, coriander, cheesecake, minimal acidity, quite dry, cracker and some salted lemon with a dry finish. Light - medium body and moderate, foamy carbonation. I wish this was way more tart and had some more acidity. A bit of a disappointment.

Yellow, with a ring of foam. Smells piney, kind of farmhouse vegetables, and a bit of citrus. Tastes nicely sour, nicely winey, nicely citrus. Itís Nice. Its a nice beer. Nice.

A steady pour into my teku glass produces a one finger thick, off-white colored head. The beer is a straw golden color that shows a clear, paler version of the same when held up to the light. The aroma smells of coriander, earthy herbal notes and lemon zest spice character, that is mixed with a light tartness, and a toasted straw / pale grain cracker like note.

The beer is only very lightly tart, and has a rounded note to it in the finish that must be the salt, but isnít really salty. This is lightly effervescent with its carbonation, and this provides a soft, prickly texture, and accentuates the light tartness. Earthy coriander notes linger in the palate, and there is a soft, citrus zest like flavor here as well. Somehow the beer seems to have a hint of smokiness to it somehow, a bit of a savory quality perhaps, and I wonder if the salt is accentuating this some how. The body of this beer is quite light, but it does have a bit of viscous heft to it, so it doesnít come off as thin at all. There is a soft, sort of yogurt like flavor here, and this melds well with the chewy, pale cracker like, sun-baked hay leaning, pale grain character that significantly influences this beer without being intrusive.

This is a nice, refreshing, quaffable brew, I was hoping for something that was a touch more tart, as this barely seems like a lactic acid beer (though it does have more of this in the texture and ancillary flavors).

Hazy straw yellow with white head. Coriander aroma, light spicy hop. Lacto is nearly bob existent but itís very slight, yeast is strong and spice is there too. This is now like a refreshing witbier than a gose.
