Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.

On tap @ Brouwers. Hazed golden colored pour with a white head. The nose is kind of briny and salty. Some lemon and lime. Doughy bread and biscuit. Hints of cracker and grass. A bit of tropical fruits as well. Flavor has a nice tartness and citric acidity. A lot of lime and lemon juice. Sour fruits. Slight bready sweetness and a fair amount of sea salt.

Bottle from Hop City. Appearance is cloudy amber with frothy white head and a nice white lacing. Aroma of lemons and coriander. Taste is very carbonated - almost like champagne - but with hint of coriander, lemon and herbs. Very sweet taste/tart taste with nice finish. Refreshing beer and pretty decent.

Tap at CBC 2014. Beer in the glass light yellow, small head. Malty sourish aroma. Starts mild malty, light sourish. Light fruity lemon notes. Finish again milder, still light fruity. Okay.

"This was kind of berliner like in it’s presentation, but didn’t really fit the style guidelines. Lightly funky and tart, with great interpaly between the wheat, lacto, and coriander (an ingredient I don’t always care for). Ridiculously refreshing and drinkable, yet complex."

Bottle at home with Harvey. Pour is slightly hazy yellow with a small white head and decent lacing. Lemony, biscuit, grassy, coriander, briny, and slight corn in the aroma. Taste is spritzy, lemon-Limey, basil, herbs, and dough with a touch of salt on the backend. Light body with fizzy carbonation. Decent gose and super crushable.

Sweet and slightly sour aroma. Pale yellow color. Taste is reminiscent of a slightly dry champagne. Sour notes come through while a sweet backbone holds it together. Hops show up at the end to clean the palate.

Pour a clear straw colour not much head or carbonation. Aroma of coriander. Delicious taste of spice, slightly sweet, with a hint of wheat and fruit. Dry feel with a pleasant spice after taste.

Bottle... Cloudy straw-colored pour with a small, short-lived, white head. The aroma is a mélange of whole-wheat crackers, coriander and moderate funk - smells like a gose. Light-bodied with middling carbonation. The flavor is lightly acidic and bready with light coriander spiciness. Not at all bitter. Throw salt in it and it’s a gose. Thanks to ctipping for sharing his bottle!

[Bottle (12oz)] Pours a hazy gold with green hues and an average size semi-lasting frothy white head. Aroma: Whoa, weird. There’s a bit of an excrement odour at first along with pepper, herbs (coriander for sure) and some salt. Flavour is better, there’s wheat, coriander, a bit of citrus fruit, salt and light lactic notes. Average bodied. Not a success, only O.K.

Hazy golden yellow color, white edge head. Aroma of dusty black pepper, whiff of funk. Taste is earthy, softly sour citrus.
