Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.

Bottle. Pours hazy yellow with white head. Aroma is wheaty, savory spices, Belgiany, fruity, great aroma. Taste is viscousy bit still a bit crisp, medi carbonation. A good beer.

Lots of wheat and hay in the nose with some of the coriander coming through. Also kinda barnyard-y. First thing I noticed is the bit of funk and saltiness, which is nice on a hot day. Wheat beer notes flow through and it ends a bit weak, but nice overall!

Bread crust, shit, and coriander aroma. Hazy yellow, thin head. Tart lemon, coriander, malt. Still a little shitty, but it almost works. Drinks like a berliner weisse and witbier combined. Clean dry finish. Spritzy. Nice concept, but the execution needs some work.

12oz bottle pours out a straw color topped with a small white head. Nose is wet wheat bread malts grass earth tones and some saltiness. Taste is as the nose with a good wheat note some saltiness and a little bit of dough.

Pours a hazy bright yellow with fizzy white head. Raw wheat and citrus on the nose; follows onto the palate with some salty notes too. Finishes with a salty note too.

Soft straw yellow with one finger of white head. Nice aroma, yeasty and peppery, light acidity, bready notes. Nice acidity, lemon, bready and peppery. Light and dry.

Bottle from trade. Pours hazy orange/gold with slight white head. Aroma is lemon peel, hay. Taste is tart lemon/citric acid, some creaminess and and a grassy/earthiness. Slight salty but more reserved and balanced than some of the other gose I’ve tried. Very nice.

Bottle. Pours a clear gold body under a small fizzy white head that faded rather quickly. The nose is rather light, some lemon rind, light funkiness, wheat, a slight briny note. The flavor is really delicate and gentle, just the lightest hints of salt, lemon, some sour mash, and delicate wheat. Insanely easy drinking and refreshing, especially with the slight hint of salt on the finish. This beer was made for a hot summer day. I was expecting a heftier sourness, but there’s just a suggestion of it, along with the slight accent of coriander. Lighter bodied, but with a slight cling to it and soft fizzy active carbonation. Excellent stuff, it really shows that you can make a ’sour’ beer without going over the top and being brash with the sourness and acidity.

Aroma: Coriander and lemon zest with a light salt/lacto presence. Appearance: Cloudy straw appearance with a thin white head that goes away completely. Flavor: More obvious wheat than the nose; a slight lacto presence throughout; coriander not as present but salt moreso. Palate: Medium body, creamy texture, flat carbonation, abrupt finish. Overall: Pretty nice Gose style beer.

Drank as a draught. Nice beer! The taste is fresh, fruity and sweet. There’s some citrus in the taste causes the beer to resemble Finnish sima.
