Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, itís hard to make.

Poured from bottle into pint glass. Murky yellow color with moderate head. Nice bold sour aroma. Flavor is much less interesting. The sour fades and is more of a complementary note. This would normally be cool, but there's nothing else in the beer to take center stage. The rest is a typical uninteresting wheat beer. It's decent, and finely crafted, but just too tame for me. Would love to see the brewer take some more chances with this beer.

On tap at Frontera Grill, Chicago. Pours a hazy translucent golden light orange with active carbonation. White pillowy head settles to the edge quickly. Aroma is wheat, coriander and a certain salt complexity. Flavor is same with emphasis on wheat, with salt and vegetal aspects in the distance. Tastes more like a wheat than a gose, but nice overall. Active carbonation, sweet mild salt finish.

Clear straw pour with no head. Light malty nose. Mild and semisweet with a hint of Brett. Light lovely sour finish.

Weird beer with a somewhat farmhousey nose, grainy, a bit of lactic tartness and the accompanying "lemony" character, a bit musty. Taste is lightly sweet cereal graininess, light tartness, crisp and vibrant with a bit of a coriander spiciness. Good beer, quite drinkable.

Appearance: slightly darker than average gold color with white specs in it, pours with a small white head that dissipates quickly Aroma: bread, funk, lemon, caramel, smells very good, complex Taste: wheat grain, some light tartness and faint sourness, lemon, Palate: light mouthfeel, fluffy, lively carbonation, minimal aftertaste Overall: very awesome beer, it's subtle but has a lot of complexity, not overly sour or tart or funky but all those aspects are there, drinkable ---Rated via Beer Buddy for iPhone

Bottle from Winooski Beverage Warehouse. Aroma: Wheat, bread, lemon. App: clear pale blonde with nice frothy head and some lacing, Taste and Palate: Full body, fizzy, abrupt finish. salty with some coriander flavor. Overall: good combination between a wheat beer and a gose but not an exceptional blend.

12 oz bottle pours hazy yellow with a white head. Aroma of malts, yeast, fruit and a little sour. Taste is banana, malt and a hint of tartness.

Notes from 2013 takeover at Monkís Pub. Looks like fun, even though itís almost as pale as the Bug Flats beer. A nice puffy head over a whitish cloudy body. The smell is kind of spicy, and a bit of a slap of pale malt. Taste is quite a slap, too. Very tart and lemony, like a Berliner Weisse. A bit salty, but only like the "electrolytes" in a Gatorade. Mouthfeel is too thick to be the lawnmower beer it appears as. Zesty taste contains the spiciness, coriander is not quite pronounced among the general spice bouquet.

From the 11/2014 3R6P gathering. +++ Sampled from a 12 oz brown bottle this beer poured a hazy yellow color with a small foamy white head that faded quickly and left a bit of lacing. The aroma was musty - in a bad off way - with coriander and phenol. The flavor was musty, bred dough, phenol, egg white and a bit of coriander. Long egg white and must finish. Medium body. Not good.

Less than great attempt with a mild lemony acidity, a rather weak saltiness on the finish, and a flat and thin palate that disappoints somewhat.
