Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.

Clear light to medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is light to moderate malty, pale malt, moderate to heavy yeasty, barnyard, tart, fruity, funky, light spicy - coriander ? Flavour is moderate to light light heavy sweet and light acidic with a long duration, salty, fruity, light spicy, milky notes. Body is medium, texture is watery, carbonation is soft. [20140502]

From tap. Pours cloudy yellow, small white head. Aroma is toasted malty, light grassy. Bitter, toasted malty, light cornish and mild yeasty. Light bitter and toasted finish.

Draft @ Jake Melnick’s Corner Tap, Chicago, IL. Pours a hazy yellow color with a small white head. Has a fruity slightly tart citric aroma. Fruity slightly tart salty citrus flavor. Has a fruity malty tart citric finish with salty hints.

CBC Session 1. Lightly hazy pale gold beer, small white head. Palate is light and dry and crisp. Light sweet floralness. Ligh5 gueuzey note. Whisper of citrus. Light dry finish. Pretty drinkable.

Cloudy pale blond color. Nice aroma, deep: wheat, coriander, lactic acid, a bit fruity. Nice wheat flavor, very salty, with light acidity, delicate spices, refreshing. Not too dry, not too carbonated, it has a good mouthfeel.
Very good.

Draft at Copenhagen Beer Celebration 2014, Session 1. Pours clear, pale yellow with a fluffy, white head. Lovely, very clean and refreshing. Some sweet dough, faint lemony tang. Light bodied with fine, airy carbonation. Sweet lemon meringue on the finish with understated acidity. Very drinkable.
