Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.

Draft @ Jake Melnick’s Corner Tap, Chicago, IL. Pours a hazy yellow color with a small white head. Has a fruity slightly tart citric aroma. Fruity slightly tart salty citrus flavor. Has a fruity malty tart citric finish with salty hints.

Bottle poured a hazy gold with a lasting creamy white head. Aromas of wheat, coriander, yeast, light lactic notes and light lemon zest. Palate was light bodied and crisp. Flavors of wheat, coriander, light lemon zest and light lactic notes with a crisp lingering citrus/coriander finish.

Blind tasting @ home. Milky light yellow appearance with a thin white head. Kind of spicy / herbal / yeasty nose. Tart orange / citrus fruits. Some floral elements as well with some coriander. Dull carbonation. Tart tropical / citrus fruit (orange / lemon / guava). Bready / yeasty / wheat flavor. Low bitterness and low sweetness. A bit twangy / tart / lactic finish. Definitely get the salt on the finish. Kind of neat.

Tart, juicy, filmy / syrupy, sweet, quenching acidity. Some banana taffy and cotton candy and gummy apple cider sorta flavors. Glycerol film in a long acidic finish that creeps into heartburn stomach acid territory. Lacto reminds me of malic acid in cider. Can I use the word refreshing in a rating, is that still okay? I like it in the same way that I like Fentiman’s ginger soda, the sour / sweet play is nice

Bottle from Whole foods PM. Pours hazy gold with off-white head. Nose is wheaty, mild spicy florals, funk, fruit. Tastes wheaty, with some floral and white peppery notes, and mild funk in the finish. Solid complexity.

Dogbrick (7243) - Columbus, Ohio, USA - APR 1, 2014
Clear yellow color with a medium white head that evaporates steadily to an outer ring. Stringy lacing. Aroma of spices, grain and wheat. Light-bodied with flavors of mildly tart citrus fruit, coriander and biscuit malt. The finish is fruity with a spiced wheat and yeast aftertaste. Decent overall.

Bottle at Dadsgiving! Pours a hazed gold with a thin white head. Musk and a touch of wheat and citrus. Medium-bodied, touches of coriander, musky. Wheat and a bit of tang on the finish. Very nice.

UPDATED: JUN 29, 2013 Draft. This one just didn’t do it for me. Very salty and just an overload of wheat, but what I do know is it is better than 312 and people will indeed dig this.

Bottle. Head is initially small, frothy/fizzy, white, mostly diminishing. Body is medium yellow. Aroma is lightly malty (toasted grain, corn starch), lightly hoppy (flowers), lightly yeasty (cobwebs), with notes of lemon/lime juice, sour apple, ginger. Flavor is moderately sweet, lightly to moderately acidic, lightly bitter. Finish is lightly sweet, lightly to moderately acidic, lightly to moderately bitter. Light to medium body, watery texture, lively carbonation. To be blunt, it’s pretty much like soda pop. To quote an amusing Snapple line from Seinfeld, "too fruity". Lots of citrus and apple with a gingery sorta note just makes it seem like a lightly malty 7Up or something. Nothing really wrong it, but it’s just rather novelty-ish.
