This Christmas beer is our interpretation of the Belgian saison type. It is dark, spicy with a dry finish and powerful carbonation from refermentation in the bottle. The beer presents itself with a hefty nose of anise leading to a a slightly sweet beer with light body and a flavor dominated by notes of cocoa, caramel and rye bread leading to a long dry finish. Of course unfiltered, unpasteurized and refermented in the bottle.

Bottle@home. Dark brown. Clear two finger foam. Spicy sweet aromas. Strange fruity port notes blended with dark raisins. A hint of glühwein. A kinky brew.

Fantastisk juleøl ! Har lige smagt den sidste 4 år efter den blev tappet. Mørk, men ikke brændt, fyldig, maltsødme, behagelig krydret, harmonisk. Synd at den ikke brygges mere !

Bottle, 8.5%. 2008 version, drunk in 2012. Sweet roasted malt aroma, a little soy and a yeasty, citric note. Unclear dark brown colour, red shine. Small stable brown head. The flavour is quite sweet to begin with, also a little citric and yeasty. Tastes like a funky, yeasty quad. OK citric, malty and yeasty finish. The aniseed and orange peel are subdued, but I somehow still feel they add to the overall flavour.

Bottle @ Home, vintage 2009. Pours dark broen with a fading offwhite head, leaving some lacings. Aroma of malt, caramel, sweet fruit, apricot, anis. Taste is malt, caramel, milk chocolate, apricot, oranges, licorice, anis. Medium body, low carbonation, alcohol very well hidden. Very sweet, but aged nicely. 221211

A bottle from 2009 (bb 1.1.2014) Intense dry fruity nose has apricots, sweet orange, honey, raisins, coriander, minerals, sweet herbal notes, creamy/buttery candy notes and a hint of booze. Somehow reminds me of sweet dessert wines. Finishes lightly almondy and dryfruity. Medium body hides alcohol completely. Velvety soft texture. A true dessert beer. Loved it!

Darker hazy brown coloured beer with average carbonation and an average off-white head. Stronger alcoholic hinted herby (cloves? Cinnamon?) Gingerbread hinted aroma. Full creamy palate. Finish is strong herby alcoholic hinted with some light sweet licorice touches..

Clear dark brown with a big beige head. Aroma is sweet, roasted malt, caramel and loads of liquorice from the excessive use of anise. Flavor is rather sweet. The sweet and spicy finish holds some alcohol as well. Doesn’t go well with food. 311009

Bottle, 75cl. Pours a slightly hazy and brown beer with a weak offwhite head. The aroma is malt, sweetness and spices with star anis and orangepeel. The flavor follows the nose closely. The palate is sweetness and notes of alcoholwarmth. Overall an average beer.
