Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

I have been sitting on this for about a year now waiting for the brett to do its thing. With another bottle in the cellar I figured I would crack one open during a cool fall evening. It was actually pretty good though as far as Ommegang goes a slight disappointment. I may drink my next bottle fairly soon just to clear some cellar space for more interesting beers that need time to age.

Aroma / Appearance - A huge foam rushed from the bottle almost as soon as I opened it. Sitting in the glass it eventually settled to a blend of about half foam and half liquid. The suffocated body possessed a bronze hue. The funk had begun to take over though in a subtle way. Dry straw, wheat, and a bready base made a nice combination. Overall though it was not as sour or funky as I was hoping it could have been.

Flavor / Palate - Toasted white bread with a drizzle of honey flowed lightly over the tongue before fading in the throat. Even though this is not super bretty it has begun to make an appearance towards the middle. Tart at first it soon moistens the throat. While a very solid saison I’m not sure I want to pick up more; the price would have to be pretty low to consider it.

25.4 oz bottle. Batch 1, June 2007. Clear burnished gold with a creamy white haze. Nose is light yeast, honey and pine. Soft and dry with a refreshing effervescence. Taste is mild sour apple, lemon zest and vanilla yoghurt. Delightful.

2008-10-02. Hazy light pastel yellow body, large fluffy white head. Lovely aroma is perfectly balanced - light funk and barnyard, muted sourness. (8+) Flavour is similar with a light funk and sourness, a mild pale malt base is reserved in its presentation. (7+) Smooth average plus palate. Really rather good. More simplistic, and less sour than I expected but its just exceptionally drinkable with just enough going on to make it interesting. Are you gettin it? Yes Ommegeddon it! (What no Def Leppard fans out there??? Well I tried.) Batch 1 Bottle, approximately a year old. From Premier Gourmet, Buffalo

Batch #1, June 2007. Pours a cloudy golden with a big pillowy head. Aroma is grass, pineapple, dust, tart apples, funk, cheese. Flavor is a bit funky, dry with the impression of hops. Some spice, some grass, some hay, a bit more funk, and some sour apples and citrus. Maybe a bit of leather. Mouthfeel is light and soft, yet satisfying. Finish finish is a bit sour. Easily one of my favorites.

750mL Bottle. Batch#1, June 2007. A quick snap, but no gushing. Pours a deep, slightly clouded golden straw, with a touching pillow of rocky foam that laces fantastically above. Aroma is fresh. Grasses, pineapple skin, cocount husk, passionfruit and lots of bright vibrant summery sensations. Delightful! Wow. On the tongue, this is explosive and perfectly dry. Airy and a waft of many delicate flavors and scents. There’s exquisite balance between the spicing, the hops, the Brett and the malt profile. A fantastic rendition! This has so much going for it with Brett working on the sugars, contributing to the stunning fresh fruit profile and lending a real air of elegance. So drinkable. So delightful. An immediate favorite. I would be blessed to drink a well aged version of this once a month.

[Bottle] Really a fantastic and interesting beer. Pours a murky, hazy tannish brown with a large off white head. Aroma is really funky, lots of tart apples and wheat, brett, must, and dusty cellar. Flavor matches with a nice light sourness. A fun, interesting beer.

Bottle - 750mL corked and caged. Neck tag shows Batch #1, June 2007. So I guess this is well aged! I originally sampled this at Max’s Belgian Beer Fest back in February, but neglected to enter the rating. The I got bottles a month or so after that and have been sitting on it since. Hazy golden pour with a tall, fluffy white head. Not a lot of lacing with this. Aroma is very yeasty and funky but not too extreme. Grass, earth, floral hops, peppery spice, and dust make up the rest of the aroma. Taste is slightly tart and very funky with strong yeast, dry malts, grass, flowers, earth, some leather, old books and spices. Almost some medicinal bitterness in spots. Body is light and bubbly. Strong carbonation at times. Dusty and dry around the edges. The finish adds a touch more hops to this. Stronger yeast, dried fruits, spices, earth notes, grass, flowers and soft funk are all noticed during the finish. Rather tasty and a wonderful summer beer!

Had this one while watching the Cowboys win Sunday night over the Packers. Light tan color. Aromas of yeast, hops, and sweet malt. Flavor is very well balanced, with spicy hops, and a finish that starts off sweet and ends with bitter hops. Very smooth, and the alcohol is well concealed. A fine beer.
