Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Pours a clear light golden yellow with a big even soft head, decreasing quickly enough. The nose is dry and spicy. Light wheaty malt with alcohol, spicy hops, a bit of straw. A bit yeasty, but mostly dry and alcoholic. The mouthfeel is about average. Low carbonation and not watery. The flavors are very dry and refreshing. Crisp hops, spicy, alcohol, and dry dry Brett! A bit of that pineapple-like fruit and straw. Very dry. Small hints of horseblanket, but nothing crazy, lingering driness. Leaves an astringency. This would be lovely as an every day beer for a quarter the price!

Pour is a bright orange with a large white head. Aroma is lots of funk and pine hops. It the kind of beer that fills the room with a wonderful aroma. Flavor is dry and citrus with a large hops profile and again some barnyard and yeast. A great example of the style. I had a fairly new bottle (April 08) so i can’t wait to see what happens after some age.

Batch 1, 1yr old. Pours a hazy golden color with a nice white head. Aroma of belgian yeasts, funk, citrus and a little tartness. Flavor is fruit, maybe pineapple or apricot, citrus, spices, funk from the brett, wheat. Pretty good saison, a lot going on in this one.

I liked this beer. Cloudy with a golden tan body. Thin white head stays with this one. A very nice exceptionally smooth brew. Citrusy and crisp. And it is advertised well......The 8% is hidden nicely.

Cloudy straw color with a thick white soapy head. Aroma of yeast, hops, and funk. Taste like a pilsner, yeast, hops with floral sweetness. Very interesting beer. Great saison!

Pours a cloudy light orange color with a medium, foamy off white head. Smells of some orange citrus, funk, acidity, and yeast. The flavor has definitely gotten some funk from the brett, but not as much as you might think. Has a pretty good little bite to it though. Alot of different spices, along with some acidiccitrus fruits blend together to formulate its flavor characters. Pretty decent drinking saison. Not sure what this will do with more time on it.

Thanks to By The Bottle crew for this great beer!--Poured a light golden copper body with a small yet fluffy white head. Big Brett and dry-hopped nose. Crisp, fluffy and nutty flavor. Acidic, dry, and with a minute of mildness until the dry acidity comes back with floral fruit in a jiffy. Nice beer! Yum!

Funky fun! Yeasty and with some big qualities, creating that lovely quality where it pitches between straight up gueuze and white wine. Interesting citrus dimension, especially. Decent palate, somewhat sour, with a bit of life. Excellent beer.
