Flavor is very well balanced, with candied ginger, spicy hops, and a finish that starts off rather sweet and ends with refreshing bitter hops. Very smooth, and the alcohol is indeed well concealed. It pours a golden yellow with a largem energetic frothy white head and has an aroma of tangy spices. It tastes slightly sweet at first sip, then quickly dries out and leaves a slightly astringent finish that vanishes after a bit. Great beer. satan165 (541), River Grove, Illinois, USA May 21, 2008 Updated: Jun 3, 2009i stupidly took the cage off the bottle then thought id let it warm for another 5 minutes. the cork flew out when i was in the other room but luckily very little brew was lost. as that illustrates, this is well/perfectly carbonated. i didnt know this would even be saison-like when i bought it but its a wonderful surprise. i drink hennepin all the time but this stuff kind of makes it obsolete. there is just no way this is 8%, its not present at all. perfectly spicy and very yeasty. its nice to have (what i consider) a traiditional saison with brett flavor and a strong ABV. the more you let this breathe, the more the brett comes out of the woodwork. considerably mild keeping the dry hopping in mind, this is very drinkable. i cant imagine how much better this would be if it was aged even for a short time. the neck label on mine says july 2007 and this is just about perfect. in the end, there is so much damn brett in this it becomes a bit one dimensional. nimbleprop (819), SouthWest, Washington, Washington DC, USA May 18, 2008 Sampled at Max’s Taphouse in Baltimore. Pours a translucent yellow with a cloudy, lacing white head. Aroma is earthy, funky, yeasty and spicy. Flavor is soft with yeast funk, hay, lemons, grass and perfume. Aroma of semi-sour funk, light hops, faint lemon peel. Flavor expands on the aroma, adds more light fruits and earthy spiciness, and the finish is super dry for that dangerously drinkable attribute. Flavor of the same sourness and sweet lemons (but not too sweet). Dry mouthfeel. Very similar to Jolly Pumpkin Bam Biere. The brettanomyces really compliments the saison to create an awesome sour and funky beer. Very well balanced and the sour/sweet notes blended together nicely. This particular bottle really seemed to age quite well (unlike some I think). I would love to have some more of this!
