Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Pretty sure this is batch one, purchased in East Dubuque Ilinois sept. 07. Clear golden, some viscosity indicated in the appearance but really nice balance between body and lactic acid and brett. on the palate. Not overly funky, just an added dimension and well done I say, subtlety is not a crime! Nice peachy flavor, alongside some herbaceous, goldings-like hop character, some quinine, maybe juniper, sort of saison like but a little flabby in the finish. Still, this is one of my favorite Ommegang beers I’ve ever tried!

A Mes rate: Bottle at Tom’s UGT Pt. 2.
Nice blonde colour with a slim white head. Yeasty and more tripel than saison if you ask me. Good hops, nice spice very Belgian indeed with no real American character at all. A good Belgian style ale but nothing to go crazy about.

Batch 1, June 2007. Poured a light gold with a fluffy white head. Aroma of spice and slight funk. Brett is the taste with some dryness. Interesting.

From a bottle poured a hazy straw color with tons of fluffy white head. Flavor not as funky as I had hoped but still good.

Bottle, batch #1. Yellow pour, visible carbonation, and lotsa white head. Aroma is bretty, some yeast and some light grain; overall a little sour. The flavor has some timidly sweet malt, mostly just bland besides the brett / funk. There should be more flavor underneath.

Bottle. Slightly hazy golden with a big stable white head. Aroma of floral hops, yeast, some citrus and a bit of funky brett. Fruity flavor with some malt sweetness, some slightly spicy hops, some yeasty notes and a bit of brett (not nearly enough to make an impression) and very light sourness. Finishes bitter and hoppy. Medium-bodied. Enjoyable.

Maybe this mellowed in the four months I’ve had it. Maybe it was always mellow. I expected more from the "funk" label and the yeast strain. A fairly mild Saison. Not funky at all. Nice aroma. Medium taste. Maybe it has more of the funk I like when it is fresher. Bring on the funk!
