Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

750 ml bottle from a trade with mcbackus. batch #1 june 2007 vint. pours murky golden with a big white head. aromas are yeaty and funky with hops also present. flavours are belgian yeast with some funk and hops thrown in for good measure. a bit weak overall with a slightly fizzy mouthfeel. pretty good but not overly great in any way.

Batch #1, June 2007, rated on 4/3/2008, pours a clear yellow gold with a decent head and clingy lace. The aroma is lemon and wet leather. The flavor is malty, slightly spiced, and fairly sweet. I’m looking for Saison, but I’m tasting Belgian Ale. OK, once it warms a bit, there’s some more yeasty inclinations – but not much. More spice shows through (coriander). Not much brett in this. Brothy body - true to the Pilsner construction. Overall, this falls short of some of what it claims to be. Drinkable, but not as per style.

On tap @ Cole’s. Aroma has grapefruit, lemon and mild spice, hazy yellow, tiny white head. Flavour is a citrus mix, some nice malt and a very yeasty bitterness. Light bodied, very well balanced, tart, quite drying , almost dusty yet refreshing, dances on the tongue. Terrific!

Fruity aromas. Some funk in the flavor. I had expected more sou. Some spice and alcohol in the flavor too. I had expected more from this one.

Bottle at the cads supa piere shack tasting. Alround rating: Corriander wow, theres soo much corriander in this i cant believe it, unfortunity this has been stored perfectly for quite a few months but theres no sourness an very little funk, basicly a very spicey saison.

"Batch #1 - July 2007" according to the bottle. Pours hazy golden with persistent white head. Tastes strongly of hops, very cirtusy with strong spruce taste as well. The description is right about being drinkable, I didn’t guess that it was 8%.

Bottle at Magic dave6’s disco dance tasting. Clear yellow gold, thin white head. Nose is slightly sour, warm, funky hops. Mouth is a little harsh, some slight burn, slightly sour. Watery hops. Chalky, peppery, slightly like tabasco. Alright, some lingering lychee taste. Pretty non-descript.

Sample tasted at "Spring in the new year with brett" at fordests house. Very surprised at the sour flavors. Not what I expected from a saison.
