The aroma is earthy brett, zest, mild pepper, and a hint of cookies. The flavor is tart at first, but it is tempered with a light fruitiness. It gets very earthy with a slight floral hint, with just a bit of malty sweetness. The finish is very dry, with a bit of spiciness and some heat. Good stuff. pantanap (1323), Chicago, Illinois, USA Mar 14, 2008 bottle (batch 1) from West Lakeview Liquors.....appearance of a golden yellow orange with a frothy white head that diminishes after settling....aromas of lemon zest and tart barnyard funkiness but mildly so (wonder if more of this will come out in time)..... very tart refreshing while maintaining a sweet belgian style malt backbone while still allowing some of the brett to peak its way through. Sampled in bottles and on tap. Magjayran (1379), Durham, North Carolina, USA Mar 9, 2008 I’ve been sitting on this one ever since it originally came out in bottles. I figure it’s high time I open it up. Quiet pop when I pull out the cork. Honey/straw color with a moderate white head. Cloudy but not chunky. Very funky aroma. Some wet hay and lemon in there as well. The flavor is as funky as the aroma. A pleasant sourness comes through and the finish is very dry. Tastes a lot more like a quality Saison than the Weyerbacher Muse I just had. I have more in the cellar so I’ll re-rate this in about a year. I just coudn’t wait though. I’ve been hankering for some good funky/sour Belgians and this was the best I had. Pours golden with no head but lots of fizz. Slight notes of the brett funkiness, but not very strong. Had this one sitting for 6 months now to let the Brett do its thing, and boy it sure is. Nice pour on this, light gold with a dense cloud in the body and a tall white head. Spicy, sour, cheesy, wild aroma. Notes of hay, sharp cheddar, lemons. Very complex and pleasing. The flavor reflects much the same with a little more citrus character. Carbonation is sparkling, certainly, but not over active. There is a continuous sour fruit/sharp cheddar thing throughout and spices come through. Nice stuff with the bacteria qualities.

Bottle provided by BossHossBikes again. So, this is the same batch I’ve had prior, just with quite a bit more age on it. Smells really cheesy indeed. Peppers, funk, straw, blue cheese. Carbonation is quite lively, however, the palate is still somehow creamy. Cheese is all over the flavor with pleasant tartness and delicate spices. The finish has a lot of floral stuff going on. It’s a good beer. bma4573 (136), Mechanicsville, Maryland, USA Mar 8, 2008 On tap at Max’s Belgian Fest 08, pours a hazy golden color, with a bitter aroma. Bit of a tart grassy flavor with a hint of hops and spice at the end. Good overall, different than I’ve had in a Saison. glkaiser (1150), Seattle, Washington, USA Mar 5, 2008 Cloudy golden with medium fluffy head. Dusty, earthy and slightly citrus aroma. A little barn yard and bready malt with bitter hops. Enjoyable. A bit of alcohol comes through.
