Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

bottle poured at 1/28 Houston tasting. Pours a cloudy light amber with a thin white head which dissipated quickly. The smell is of yeast and some spices. Taste is very yeasty with straw/barnyard funk. Mouthfeel is bretty and dry, dry, dry.

Bottle. Pale yellow, hazy, medium white head, some lacing. Aroma is yeasty, citrus, spice, some floral hops, orange peel. Flavor is more spicy, light palate for an uber beer, dry finish.

Sample from bomber shared by bethmatt0421 @ Cincy gathering. Pours a hazy pale golden color with a good sized white head that collapses to a thin crown. The aroma is sweet fruits accompanied with a little tartness. The Brett is mild at best. Flavors include fruits that are moderately sweet, light malt, and a strong yeasty component. Medium bodied. I have a bottle that I am aging to see if it develops further.

Rating from 2/1/08. When I find my other notes on this one (if I find them), I’ll revise this rating. Pours gold with a white head. Smells of straw, dry malt, some tartness. Taste is crisp and dry with lots of peppery splashes and a bitter finish. This seems to have lost much of its malt character.

Lightly sweet aroma. Smells faintly of herbs, spices, burnt wood, and coriander. Poured golden-yellow in color with a large, fluffy, white head that lasted throughout. Hazy. Lightly sparkling. Flavor is lightly sweet and lightly bitter. Tastes of yeast, funk, bitter hops, flax seed oil, lemon, chardonnay, and herbs. Light to medium body. Thin, dryish texture. Average carbonation. Dry bitter-sweet finish.

clove ester explosion in the aroma stays along for a while before the funk is unveiled. Old person’s home/musty action deep underneath starts coming on a bit stronger. Flavor- enjoyed it quite a bit. perfume/cologne-like floral flavors come on with a sharpness that I was not expecting. Funk comes on like milk that is about three days past its expiration date. A unique brew that will not be for everyone, but I liked it quite a bit.

Bottle dated 6/07, consumed 2/08. Hazy golden body, medium off-white head, nose of banana, citrus, clove, honey and funk. Too much sharp funk in the mouth, too sweet, perfumy character, fruits. Does not hide alcohol well, astringent finish. Don’t like this one.

On tap @ the new Liar’s club in Alpine. A bright cloudy yellow pour with a big, rocky head. Nose was sweet and tangy. citrus, spice and banana dominated the aromas. A very drinkable Saison.
