Flavor is very good, but not right on. It either needed to be a little spicier or more sour. It, while very flavorful, just doesn’t hit the nail right on the head. I expected more from the "Brett". Fantomasus (122), USA Jan 5, 2008 Pours a burnt yellow color with a flimsy white head. High marks for appearance are more from originality than asthetics (as are most of my high marks for this beer). Sells of lemon, and orange hard candy. Sweet fruity malt flavor then balanced by the hops and a tiny bit of spice. I find the palate superb. Has a different mouth feel than any beer I have tried. While I figured this may lay down better, it was too tempting to open. It definitely shows that it is a young beer. Light sweetness on the tongue and some yeast seems to linger as well in a bready character. I would want just a bit more carbonation as this poured and sat very flat. It had a medium body to the mouth, not too thin, not too thick. I wasn’t picking up on the spices here, so it may need to mellow for the character to come through. Also for 8%, it didn’t feel like it. I’d probably come back for a second rating after letting this one lay down for a year or so. (Bottle Pour 1/2/2008) GreatLibations (1440), Last Supper, Arizona, USA Jan 2, 2008 Jesse, you rock amigo. You brought this back from Vegas, among others, and I do appreesh. Batch 1, 2007. I’m drinking this right on the six month mark as suggested. Funkhouse is the word man. Ommegeddon pours a hazed, pale yellow color with an explosive cloud of froth that sits there like a nuclear winter. Clinging to the walls of my goblet like survivors clinging to the threads of life, the mushroom cloud finally reduces to a thick, fluffy canopy that lingers forever like scartissue. Strong Belgian aromas including seltzer and a punch of brett in the forground. I can smell it coming. Medium nectar with ample residual effers creating an expansive, creamy sensation. Nice! Going down this brew is totally approachable although strong and hearty. It’s dry and bitter with a defined souring that seemingly dissappears just as fast as it shows up. The thing is is that the souring leaves remnants like memories of days gone by floating around my palate. This is an amazing effect. The powerfull bittering component wipes away all living flesh laying the ground work for nuances of citrus, green apples and peaches, herbs, spice, and musty cave flavors to flourish. The finish is bittered executively clean leaving me ready for another sip. Overall: the peachpit bittering kills the brett effect very rapidly not allowing it time to set in and cloud the palate but it does lend just enough leniency to allow it’s impression on the user. Good stuff. Highly recommended. 5000 (2409), Hardened Liver, Washington, USA Jan 1, 2008 Bottle: Cloudy straw, large bubbley white head, spotty lacing.   Tart nose, seems oakish, slightly floral but not as much as one
would think for a Saison.   Minor Brett on the tongue, funky, some basement, but not as fruity, dry, or tart as one would expect.  
For the price this one was sure a letdown.   Falls flat, with only a minor tartness that lingers.   Average body and mouthfeel.
  Not bright, instead bretty, but rather dull.   Needs to be sharper, more floral, with a bit of a BANG.   It only has a little
sting.   Decent, but certainly not worth the price.
Silphium (2114), Haslett, Michigan, USA Dec 31, 2007 Batch #1, June 2007. Hazy straw body, medium-thick off-white head. Herbal, peppery, spicy nose with floral notes (potpourri), light fruit, and just a hint of sour funk. Rather dry, spicy body, with bretty notes just starting to show in a light wispy tartness around the edges. Bitter finish. Alcohol somewhat obtrusive and hot. Sharp bite in the finish. We’ll see if it improves much over time. dirkules (613), Toronto, Ontario, Canada Dec 29, 2007 Bottle: Hazy pour, frothy head, golden orange colour. Apples come through in the flavour right away. A definite veg. and a particular hint of floral hops with pilsner. Finish is too light at start, and has too much aftertaste to finish. almost watery to a point where you can drink this too quickly to purely enjoy what it’s about. After it warmed up a bit this one became a much more enjoyable drink.
