Flavor has malt and the herbal quality mention in the description and with maybe a touch of pepper at the end. A nice creamy palate and a very nice beer. The aroma is an intreging blend of sweet light citrus and robust spiciness. The initial impression is a mustiness, but as it rolls of the tongue it mellows into almost lemonady twist, and then the musty-yeasty herbalness comes back in a very dry finish. Different. Aroma is pure Belgian deliciousness. I was expecting a sour flavor to this, but to my surprise, it was an easy drinking saison. I guess the name implies a crazy beer, but actually I found this quite mellow and smooth. There is definitely some funkiness here, but it’s not overbearing or intrusive. Lemony aroma with noticeable spices and barnyard characteristics. Swirling brings out bready yeast. Rustic flavor: earthy and herbal. A tiny bit of Brett near the beginning, before a lightly sweet middle and hop-dried finish. Great Saison now, but as that brett kicks in, it’ll be magnificent. 3.8/5
UPDATE: The nose has become, as expected, mustier and a bit more horse manure-ish. But the herbality therein has become brighter, almost floral, beautifully balancing the effect of the brett. The secondary yeast now creeps in along all the edges of the flavor, whereas it used to play only a small role at the beginning. 750ml. It still has that lemon and honey sweetness, but there’s a decent amount of cheese (brie), with more of a basic sweetness of candy sugar and light yeast phenols. Mildly tart, builds on the back, leaving the palate lightly dry and parched. Clear yellow with a fluffy white head. Earthy and spicy aroma. Slightly sweet and spicy ginger taste with a pronounced peppery dry finish. 19641948 (492), Greensboro, North Carolina, USA Oct 24, 2007 Pours a cloudy golden straw color that is quite bright. Fluffy white head audibly fizzes away to a thin cap. Laces moderately. Aromas of some spicing, yeast, citrus, and just a hint of must. Flavors offer some citrus, lemon, yeast, fresh ground pepper, and really just a whisper of funkiness. A "tame" wild ale.
