Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

bottle @ Coles Buffalo NY. Decent funk in the nose. Probably should age a bit more. Earthy, slightly musty. Nice golden color with medium carbonation. Pretty good. will rerate

on tap Slightly cloudy light golden with a fizzy white head. aroma of citrus and hops. flavor smooth with spice (mild) and a slightly earthy bitterness. finishes clean, slightly wet. A solid saison.

750 ml bottle. Pours a hazy light yellow gold with a medium white head. Aroma of lemon, earthy/grassy hops, faint citrus and spice. Taste is lemony with hints of grassy/earthy hops, mild honey and spice. Has a tarty finish. Gets beter as it warms.

750ml bottle: Pours to a hazy yellow-gold colored body with a huge, frothy, thick, white colored head that lasts the entire way through the glass. The aroma shows some tart barnyard notes initially, then some light lemon, light grass, funky sock, some pale malt, and hints of earthy hops. The overall aroma is fairly clean and showing tart citrus. Taste is a sourness immediately up front that almost cuts the tongue, followed by earthy/grassy & bitter noble hops, some light pale malt (though not much sweetness here), some bitter tea flavors, and light alcohol only barely apparent in the nose if held in the mouth. Light-medium bodied, lively, small, carbonation, finishes with a very dry mouth feeling combined with a light horseblanket. Overall it lacks complexity in flavors.

From a 750mL Bottle. Courtesy of artusory. Thanks, Ryan! Pours a mostly cloudy, even lemony golden color with a thick layer of well sustaining white foam. Delightfully light brett aroma, providing a firm, bold presence without getting overdone. Tropical fruits - papaya mostly, citrus acidity - soft meyer lemons, and funk - restrained dusty herbs; it’s all there. A touch of floral hops and marshmallow-like malt sugars back up the brett display. Light bodied, with a shimmering, effervescent carbonation that soothes the palate. The flavors aren’t quite as impressive as the nose, but still enjoyable. A generous ginger spice jumps out right away, a bit overdone for my palate. Floral lavender hops come out next, along with some mild mustiness. The malts get a bit toothy and grainy after this, kind of interrupting the flow of flavor. More ginger, light pepper spice, grassy hops, and dusty brett recombine in a dry finish. Pretty enjoyable overall; I think the weakest part is the husky, grainy character that comes out mid-palate. The ginger also seems overdone. If these two traits held back and hid a bit better behind everything else that’s going on, this would go from being a good beer to a marvelous one.

on tap at town hall. Slightly cloudy wheaty color thick white head w/ nice lacing. Very light aroma, tiny citrus some light bread.. not much there. Palate is full & well coated. First impression was holy heck a hopped up belgian. Lots of citrus hops w/ a light sour something over sweet breads and sugars a hint of white pepper and a touch of cloves. Finishes very clean. Very different in a good way. Odd the bret really doesn’t have a large affect on the flavor other than the very dry finish.

Poured a hazy yellow with white head. Aroma of lemon, citrus, hops, and spice. Herbal flavors of lemon zest, coriander and a bit of hops and pepper. Not very funky, but I’m sure the Brett needs to develop more.

Draft. Pours clear and yellow with a medium-sized, long-lasting, white head consisting of tight, small bubbles. The aroma is malty, doughy bread with honey, banana, and a touch of grassy hops. The flavor starts of with some funky esters: spices, bananas, and bubble gum. It is sweet and a little grassy. The middle of the tongue picks up more fruit and spice, and the finish is grassy, sweet, and thin. The mouthfeel is excellent - luxurious and creamy with exactly the right level of carbonation.
