Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Hazy golden with a lasting white head. Aroma of citrus, coriander and other spices, flowers and a hint of alcohol. Dry, spicy and floral flavour with some pepper, something like fruity American hops, and a reasonably bitter finish.

pours a dirty tan gold, with big but somewhat short lasting head. Aroma of dust, hay, mustard, lemon zest; very much a saison with a dose of funk. Tastes of citrus, hay, light vinegar, mustard, dust, and grass. Finishes dry, dusty and grassy. Medium bodied, the high carbonation keeps things light. Good, but it’s totally what you’d expect. A saison with brett, wooo.

Clear golden/orange in colour with an initially large white head that was quick to dissipate, light lacing. The aroma is very light, with some apples, yeast and must. The flavour is where the brett takes over, lots of yeast, citrus with a moderate bitterness. Moderately bitter mouthfeel, medium/light body, medium/high carbonation. Finishes long, bretty and bitter.

The aroma was pretty much non-existent but the brett in the flavour was fantastic. If anyone still has batch #1 drink them now.

750ml bottle obtained in a trade with TheCheeseMan, thanks Dan.
Opened on October 31, 2008.

Having had this 20+ times, I think its fair to enter a rating. Sort of like Orval, my experiences with this beer have been up and down. Some bottles have been crisp, dry, lightly bretty, and dry and others have been overly spicy, sweet, or just off. But for the most part I like this beer and my experiences have been more of the former.

Thin filmy head of minute bubbles. Reduces to a thin sheen on the surface. Organic aroma with some light lemon, herbs, white grape and spices. Color is a hazy golden orange. Little light on the carbonation for a saison. Whoa, very crisp and refreshing. Like biting into a crisp green apple. Tangy bitternesss and dryness that sits in the back of the throat. More earthy flavors, spices and lemon. Dry yet succulent. Each swllow makes the mouth salivate for more. A very unusual brew but one that is actually pretty damn good and very easy drinking. Lingering dryness and pastyness but still a very plesant drink.

ummmm, im not sure what to say. this is definetly the most interesting beer ive had in a long time. its like its not sure whether it wants to be a lambic, a farmhouse ale, a pale ale, or maybe a little of it wishes to be a champagne? delicious, herbal, and refreshing, a wonderful mix of flavors, tight bubbles make for a bit of a bite at first, but mellows out very qiuckly. a wonderfiul find

750 ml bottle Batch 1, June 2007 3/14/09 (Binny’s Naperville)- Pours a hazy golden body with a huge white head. Aroma of yeast and malt. Taste is of the same with a little hops thrown in along with some lemon. This medium bodied brew is quite interesting. The Bret yeast definitely adds a little funk but definitely for the better. Another great brew from Ommegang.
