Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

750mL bottle purchased at Ledger’s Liquors in Concord, CA. June 2007 Batch aged about 6-7 months. Estery, slightly banana aromas with some citrus, lemony notes as well. There is definitely some Bretty funk that is underlying. More of a tart, acetic aroma. Mild to moderately hazy golden body with a moderate white head that is pretty strong. Nice, small, bubbly lacing present. A bit tart, fruity, and sour to start. Some brett notes are definitely there, but not as sour or as acetic as I remember it being when I had this at BCTC a couple of years ago. This brew is quite dry and rather hoppy with what appears to be a dry, spicy noble hop. Probably Saaz. A little metallic twang at the end. This is pretty good, but lacks the sharpness I remember it having. Perhaps this would do better with a few more months on it.

07.16.05 BCTC, many samples, then two full glasses. Clouded dark golden, ample, foamy, lasting, sticky white head. At some point, I think I actually paid for a couple glasses of this stuff, it was that good. Aroma is spiced up like Thai food, farm, cut grass, and my hiking basket. Flavor adds more of the barnyard, but subtly, and there’s more than enough body to carry off the easy going sour and spicy finish. Dangerously drinkable indeed. I do hope I get to sample it again.

Draught at BCTC and subsequent bottles. Lemon-yellow body with a clean, frothy white head. Aroma has fragrant grapefruit and barnyard action with notes of lime and pepper. More brett character than I was expecting. Flavor is mostly dry with some nice phenolic-bitterness, like bitter melon. This is a big hit with me. I’m looking forward to the 750s after some time laying in the vault.

Thanks to Joebrew for sharing. Gotta love a bottle with a mushroom cloud on the label. Unfortunately, the label was the best part. This wasn’t a bad saison, it was just underwhelming. The beer poured a yellow color with a thing white head. Light vegetable and wheat nose without much of the spice and funk I expect in a good saison. A little bit of wheat and yeast in the body and a slightly off finish.

Batch #1, June 2007. Hazy straw body, medium-thick off-white head. Herbal, peppery, spicy nose with floral notes (potpourri), light fruit, and just a hint of sour funk. Rather dry, spicy body, with bretty notes just starting to show in a light wispy tartness around the edges. Bitter finish. Alcohol somewhat obtrusive and hot. Sharp bite in the finish. We’ll see if it improves much over time.

(bottle - corked & caged 750 ml) Clear and effervescent golden pour with a puffy white head and lots of carbonation. Light aroma of candy, orange zest, yeast, and some apricot. Flavor begins sweet with hints of orange and then goes to a very sour middle with some flavors of apricot and grape and an extremely sour and cloying finish. Definitely needs to mellow.
