Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

(Draught) Sampled at the Belgium Comes To Cooperstown 2005 in Cooperstown, NY. Pours a cloudy, golden body with a foamy, white head. Nose and flavour of hemp, cherry and hops. An underlying farmy flavour is attractive but I didn’t fall in love like many others.

Bottle. Hazy yellow colour with a medium white head. Rich aroma and taste of malts, herbs and spices. Mild biiter finish.

Bottled. Thanks omhper. Light hazy, golden colour with a nice, lasting bubbly head. Milky, citric with fresh, near sorbet-like brett-profile. Blond berries. Very clean.

750 ml corked and caged bottle poured a clear golden yellow with a large lasting creamy white head. Aromas of citrus, barnyard, straw, earthiness and light leather. Palate was light to medium bodied and smooth with a lightly dry finish. Flavors of citrus, earthiness, barnyard, straw, light pine and a hint of leather with a smooth dry lightly tart lingering bitter finish.

My bottle (750ml) shared with tupalev & rudolf. Batch #1, June 2007. Pours a cloudy yellow with an average size diminishing fluffy white head. Nice lacing. Good but somewhat standard Saison aroma, yeasty with brett, light funk, fruit and spices. Flavour though is fantastic, so tasty and easy to drink: Funky yeast, lots of fruit along with spices and light hops in the finish. Alcohol’s well hidden. Medium bodied. A refreshing, very flavourful session beer -- I would love several pints of this!

750 mL bottle received via trade with Immy. Pours hazy slight yellow, sparkling, average fizzy, white head, lasting with fair lacing. Aroma is heavy malt (grain, hay, straw, cereal), average hops (flowers, herbs), heavy yeast (horse blanket, musty, earth) with notes of grape, apple, pear, medicine, and bandage - gotta love the brett! Medium bodied, sticky texture, lively carbonation, and a bitter finish. Average duration, light sweetness, moderate acidity and bitterness.

Thanks to egajdzis for opening this. Batch #1, June of 2007. Opened right around the six month mark. Pours a lightly hazy golden with a medium bubbly white head that left some lacing. Aroma of citrus, some light barnyard, brett starting to come through, some light funkiness, still a little sweet in the nose. Flavor of Saison spiciness, horse blanket, lemon, ginger, drying out nicely.

Draft at the Belgian Room. Hazy yellow with a small head. Aroma is mellow citrus, lemon and tangerine zest. Taste is grassy with subtle grain, leather and pepper with a touch of funkiness. Smooth and perfectly carbonated.
