Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

Drank this last night as my tribute to Michael Jackson. I might have found a better one but it was fine. The aroma hinted at a funky wet hay in the barn loft type of brett, that may have been a combination of the brett and dry hopping. Flavor was focused on a spiciness that could variously be attributed to hops or yeast, with a touch of funk. It was quite dry, very dry. Drinkable as I acclimated to the drying, semi-astringent palate. Soft, pleasing carbonation. Golden yellow color, light cloudiness, smallish head but generous lacing.

on tap Slightly cloudy light golden with a fizzy white head. aroma of citrus and hops. flavor smooth with spice (mild) and a slightly earthy bitterness. finishes clean, slightly wet. A solid saison.

On tap at VIntage Estate. Pours a cloudy yellow color with a nice white head. Aroma is definitely funky, big yeast and spice character. Pepper and new shoe leather are the highlights. Fruity, earthy taste. A little citrus, some straw, with a slightly sour finish. An interesting brew, I’ll seek out a 750 in the near future.

Sampled at BCTC 05 and again at Kennett 05. Pours a slightly hazy light copper with a nice tight pure white head. Aroma is yeasty and spicy with some saison-like funkiness and some light sea-salt character. Now this is a saison- much better than the hennepin. Lots of funky barnyard flavors as it warms. Nice smooth finish.

Bottled 6/07, courtesy of santoslhalper. Light fruity Brett aroma, probably needs to mature for another year. Lactic quality, mild rubber with a wheaty undertone.. Light floral hops. Spicy but mild. Golden amber hazy with foamy lacing white head. Medium boty with medium-heavy carbonation. Starts with light Brett and some lemon peel and mild wheat. Light acidity with mild spicy bitter hops. Dry Brett finish with mild spice. Light bitter chalky after. I look forward to tasting next year.

Bottle poured into a Trappist glass. OO pours a delicate cloudy yellow like a witbier. The head is large and frothy. An aroma of lemon and hay is pretty strong and has a fruity acid tone. The body is thin and dry. It’s tart more like citrus peel or zest than the meat. It is highly carbonated and the alcohol mixes with the spicy hops to create a floral flavor that enhances as the beer warms to its intended temperature. The finish is quick but a slight tart after taste lingers.

Atlanta, Ga. - Mac’s Beer and Wine - 750 ml corked bottle. Bright medium golden colored pour with a hint of murkiness. Silky white head that leaves a thin coat of delicate lacing. Lemony aroma with hints of spice - coriander perhaps. Clean, crisp flavor with hints of spices - probably coriander. Lemony notes, hints of butter. Nice silky mouthfeel. Good session material on a summer day in the triple digits.

Re-rate... Bottle... It’s less hot and a touch more acidic. Moving along nicely. Score adjusted from 3.4 to 3.8...****Original rating**** ... Bottle... Hazy, light yellow ale with a mid-sized, fizzy, white head. Decent retention. Moderate, spicy, clove phenols stand alongside under-ripe banana, ginger, pale grains and straw in the aroma. The flavor centers on grainy sweetness up front with moderate bitterness and very mild acidity bringing up the rear. Medium to full-bodied with a skim-milk mouthfeel and prickly carbonation. Lightly acidic, coarse, dry finish. It’s getting there, but could use another several months in the bottle. I look forward to giving this one another go.
