Commercial Description:
Belgian pale & pilsner malts w/ Styrian Golding for bittering and Saaz for aroma. Ginger predominates the spicing. Fermented in primary with Ommegang's house yeast, followed by secondary with Brettanomyces bruxellensis. Dry-hopped in secondary w/ a blend of hops; Tettnang being the stand-out. The flavor profile is very herbal with an earthy undertone (very fitting for a Belgian-style farmhouse ale). The dry finish and pronounced hop aromas hide the 8% abv very well. Dangerously drinkable for its strength and character.

750 ml bottle purchased at Ommegang during BCTC. Pours a clear gold with a large frothy bright white head. The funkiness from the Brett in this one just isn’t working for me. The funk in the aroma reminds me of cheap public bathroom soap and has a lemon zest about it. Flavor of lemon pledge with a dry aftertaste. Ommegang swings and it’s a miss.

Pours with a slight crushed pepper scent and an average sized fizzy head that is mostly lasting. The head lacing is fair and body hue is yellow but hazy. The taste is initially very spicy and the finish is lightly bitter and sour like sour milk. The body of the beer is light according to the palate and the texture is dry. The carbonation is lively and the finish feel is herbal!! Kind of like a herbal tea!!!

Batch 2 (March 2008). Pours with a large, white head with a lightly hazy yellow body. Aroma of barnyard, pepper, lemon citrus and some brett. Taste is saison spiceyness with a nice lightly sour back bone. A well balanced beer that finishes a bit herbal. Dry mouthfeel with lively bubbles.

Batch #1 - Terribly dissapointing. Hazy straw colored body with a fizzy white head. The aroma is shows some potential with a lightly funky brett component that is backed by a more traditional Ommegang aroma. The flavor and palate are not so good. Extremely attenuated with an over the top champagne-like mouth feel. The flavors are rather subdued and the more I drank and the warmer it got the less I liked it. Typically with any kind of Saison or beer w/ brett, warmer is better. A bummer for me as I had some hope.

Corked bottle. Blonde. Plastic, oak, mango, grapefruit and pineapple in the aroma. Plastic and leather in the flavor, with citrusfruit and pineapple. Slightly perfumed. The brett really adds to the complexity of this beer.

bottle, batch #2. Pours a light clear golden color with an average fluffy white head. Nice lacing that sticks around for a while. Aromas of tart dry barnyard funk and earthy saaz hops. Flavors follow the aroma- lots of dry tartness. Some earthy floral hop notes, herbaceous vegetal notes, a slight semi-sweet malt flavor in the background. Slight spice notes, and some orange peel thrown in. The use of more brett than the first batch is readily noticeable. Very dry on the palate, with a bit of a tart finish. An excellent, interesting brew.
