Upon surfing the local liquor store isles for a new beer, a friend of mine stumbled across Three Philosophers. With such a fantastic name and exquisite bottling, I had to get it. I drank this beer at only slightly below room temperature due to time restrictions. First to note is its fine aroma, with a sweet and fruity smell. Its taste was strong and satisfying - like nothing I have ever had before. As my first lambic, I was blind going in. I was very much impressed by the powerful flavor and cherry after taste.

Bottle to tulip, dark amber, reddish, cloudy /sediment noted. Sweet, dark cherry /prune,alcohol aroma. Very sweet, prune, dark malt, no hop bitterness until mild bitter fruity finish. More flavors in there. Heavy mouthfeel. Moderate carbonation. Definitely a sipper.

Aroma: a bit funky and faintly fruity; very complex; Appearance: very dark and glows slightly red in the light; pillowy head that dissipates quickly; little lacing; Taste: distinctive alcohol; some coffee but not overpowering; faint apples; not yeasty; nicely bitter; Palate: full body with soft carbonation and long bitter finish; Overall: delicious, complex and lovely. Would definitely buy again.

12 oz. bottle. Dark brown with off-white head. Aroma of malt, alcohol, a hint of cherry. Taste: malt, caramel, subtle cherry notes. Well balanced. Good carbonation. A nice warming finish.

Bomber into chalice. Clear dark brown/copper with a slight tan head. Black licorice, Belgian yeast, a bit of chocolate and dark fruit notes. Loads of dried fruit flavor, sticky on the palate and creates quite a boozy warmth. Heavy. Wish I had a season’s supply of it.

Bomber to a snifter. Clear copper brown with one finger tan head. Has the look feel aroma and flavor of a true Trappist Quad... Layers of complex flavor hide the ABV... A delicious beer...

This is an American Quad that appears and tastes as if monks had been producing it for 300 years. The bottle I drank from had been aged for one year, though I have also had the 2015, age rounds the edges and softens this strong ale. Notes of black licorice, orange peel, belgian yeast and dark, dark chocolate are pronounced throughout. with a sweet carmel malt bringing up the rear. A great Quad that flashed me back to my youth in Europe.

I poured it from the bottle into a Stella Artois glass. The aroma is cherries and a warming alcohol. The taste was cherries, alcohol, and Belgian yeast. The palate was very nice. There was a nice smoothness, which gives way to a nice carbonation. As it warms, the smoothness is enhanced. This was good.
