On my way to this iconic brewery with a suitcase full of marshmallows I admittedly questioned my good judgement. However, sipping on a glass of this beer I am utterly happy that the purist in me stayed at home.

Omnipollo Hypnopompa is an imperial stout brewed with almost 100 kgs of marshmallows and Tahitian vanilla beans (the size of cigars). Virtually no carbonation and boiled a bit extra for good measure this is a beer strictly for the stout inclined.

Batch #1 intentionally has no carbonation. Batch #2 has low carbonation. We listen to our friends=).

Drink now or age for many years.

Near still thick black. Aroma of vanilla, nut, chocolate, roast malt. Very sweet, cream, vanilla and a slight woodiness. Very thick and low carbonation, Really good.

A pitch black, a very weak and dark brown head. Aroma is intensive and great. Coffee, vanilla, some sweetness of raisins and fruits, quite sweet. Taste is also a very powerful, salt liquirice, liquirice, roastiness, black coffee, some sweetness of berries. Full bodied, soy sauce thickness, not sticky, no carbonation. Warming notes in the throat. Very powerful and intensive flavours but still balanced. The great beer for the slow enjoyment.

2015/02/27 - Pours a jet black colour with a thin tan head that quickly dissipates. Aroma is amazing: chocolate, vanilla, smoke, marshmallow, mild tobacco and sweet booze. Taste is chocolate, vanilla, marshmallow, wood, mild smoke and a boozy finish. Mouthfeel is oily with low carbonation and a drying and mildly warming finish. Very surprised by how much I enjoyed this. Would love to savor this by a campfire!! ---Rated via Beer Buddy for iPhone

Black as night with no head. The aroma is intense roast malt and chocolate. Some coffee and earth as well. The flavor is intense too. Lots of the aroma comes through along with a kick of alcohol. Sip it by a fire.

Cool, unique imperial stout. Black pour with virtually no carbonation, no head. Aroma and of roasted malts, smoke, vanilla, and some spices. Not much marshmallow taste, but I do taste some hints of vanilla.

Bottle at Craft. Thick and dark. Lots of roast, booze, marshmallow, smoke, dark fruit. Very thick, dark bitterness, coffee, small vanilla sweetness, lovely. Alcohol quite hidden. Wonderful!

Une bouteille de 33 cl bue dans mon camp de chasse. Stout impérial meilleur avant le 20 juillet 2023. Un liquide brun aux contours rouge vin. Aucune tête mousseuse n’est visible. En fait, aucune bulle ne l’est aussi. Au nez, agréables parfums doux mais pas écœurants de sucre roux, de vanille, de mélasse fruitée, de caramel foncé, de chocolat et de café. En bouche, les malts rôtis stoppent la montée des sucres. La vanille, le chocolat, le caramel à la fleur de sel et les raisins sont aussi des saveurs captées par mes papilles. Au palais, le liquide est liquoreux et très faiblement remué par les bulles. Ces dernières sont bien faibles mais pas absentes. En finale, l’amertume est caramélisée, teintée par le chocolat et soutenue par des fruits qui ont macérés dans un alcool doux. Beau petit jus noir bien aromatique avec des saveurs qui ne sont jamais trop sucrées.
