Sit down kid, and let me tell you the story of the Wild King. The Wild King is powerful and lives in a stronghold of fresh raspberry, pineapple, and warm brandy aromas. He wears at his hip a great sword of flavor, folded within the steel is raspberry tartness, mingling with Brett complexity. At the end of the day he rests on a throne of oak and vanilla. All hail the Wild King! A Wild Saison, aged in both red wine barrels and California Brandy Barrels with fresh, local raspberries & Brett Yeast.

2012 bottle from (the back of) a friend’s cellar. As interesting as it is to drink a 4+ year old sour with this much going on, this was just too chewy and full bodied for my palate. There’s a moderate amount of sourness but a ton of funk, and while it sort of worked I didn’t find myself wanting to drink more than the 6oz glass I had.

750ML as a part of the once-made project. Split 2 ways at fridge temp in a stemmed glass.

A - Champagne like orange color with a 2 finger creamy head.

S - Smells pretty nice. Sort of a weak juicy juice with berries.

T - Mild tartness, some brett funkiness with some fake juiciness like corn syrup? Brandy certainly at the finish brandy / rum but comes across as more medicinal than expected

M - Nice mouthfeel, obviously bottle conditioned.

O - Not a favorite. the flavor description is accurate but it comes out far worse than I would have liked.

Aroma is tart raspberry and slight bretty cheese. Pours dull pink with chunky haze and lots of carbonation. The taste is wonderfully tart. Underripe raspberry and rhubarb. I am a big fan of this. Would love to try it back to back with Weyerbacher Riserva.

Bottle thanks to jleblanc (Secret Santa ’12). Hazy pink-orange pour with white head. Lots of grapefruit in the aroma, light berry notes, gentle sour, light raspberry. Taste is sweet, acidity is only light, raspberry acidity but no funk, grapefruit flavor. Palate is med-light with medium carbonation. Nice.
