It's remarkable that we do not have a big cider tradition in Denmark, as it is known in Normandy, Bretagne, and Southern England. We have the apples. Perhaps even some of the best. A good mixture of Ingrid Marie, Gråsten, Belle de Boskoop and James Grieve. The proces from apple to cider is like from grape to wine. The apples are pressed to juice, that is fermented into very dry cider. Then unfermented juice is added (like in German wine) and a bit of carbonization (like in Vinho Verde). This makes the cider nicely fresh and fruity with lots of small sparkles in the glass. In both aroma and flavor the notes of apples and flowers are accentuated with notes of nuts to finish off. It is the sweet/acidic flavor that makes it easy to enjoy. Chilled served in a white wine glass. As aperitif. To lunch. To a piece of cheese. This is cider for adults.

Bottle from Irma Torvegade, CPH - pours clear yellow with tiny head. Dry clean apple taste and aroma, great balance with medium sweetness and acidity, very refreshing and easyily quafable for the abv. Impressive.

Flaske, 75 cl. Gylden og næsten klar. Dufter rent og klart af æbler. Men er lige lovlig sød og midtersøgende i munden. Det giver en kort, utilfredsstillende finish.

Bottle@home. Very light yellow. Clear. Small head. Fair carbonated. Intense fresh lively apple-pear notes. Dry with a sweet finish. No sourness like mine. Fine cider.

One of my favorite ciders. Very dry and with a strong taste of real apples. This cider is, for me, what ciders should be about; Apples.

I’m no cider expert, but I rather like this one. Rather appley flavor and aroma, mildly but not very sweet, with a nice acidic/tart note. Well balanced, and threads the needle between being too much like apple juice on the one hand, or failing to retain any real apple character on the other.

750 ml bottle from Irma CIty, Copenhagen.
Pours a clear light yellow colour with a minimal foamy head. Lazy visible bubbles. Aroma of sweet apples and some citrusy notes. Flavour of tart, sweet apples, sour citrus and some alcohol. Light bodied, quite thin mouthfeel and a warming apple finish. Nice cider.

At Copenhagen Oldage on 20 May 2006. Pale gold colour. Musky, fruity aroma. More medium sweet than medium dry. A bit inconsequential but pleasant enough. Not exactly challenging like a British farmhouse cider but way better than the industrial scando-synth-pops I’d previously stumbled across.

Bottle, courtesy of Pinball. A quite pale one, golden in color, still and headless. The aroma is a bit strange, but it’s apples in a way. Medium body, a bit sweet. Apple flavor, both initially and in the tail, but not my preferred kind of apple flavor. A decent one indeed, but it wasn’t spot on for me. Would be nice with some cheese or grilled meat I guess. 100814
