Very acidic and sharp - and we found out why from one of the assistant brewers. They use certain type of malt (the exact name slips my mind) that alone has a very sharp, bitter citrus-like flavor... strange for sure, but it gives this witbier a flavor like it’s been mixed with concentrated lemon juice... which is actually REALLY tasty, since it sort of mimics a lambic sourness. This wit had it all: a bust of active, peppy lemon and wheat zest followed by a sweet fruit and creamy body. Unique if nothing else. Light gold color. Small sized white foamy head. Aroma is fruity and sweet, touch of banana. A medium to full bodied wit. Malts are fruity and sweet, touch of banana and clove. Hints of citrusy hops. Coriander and orange peel. Touch spritzy. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet. thedm (3833), Fort Wayne, Indiana, USA Aug 5, 2007 This draft brew from the Oregon Brewers festival poured a head of frothy fine to medium sized bubbles that were fully diminished and left behind a hazy softly carbonated yellow-orange colored body and a poor lacing. The mild aroma was malty bready mild spice and dough. The mouth feel was weakly tingly at the start and at the finish. The mild flavor contained notes of malt hops and floral. An OK brew just nothing special.
