The Wet Whiskers Ale is an extremely hoppy IPA. We use large amounts of hops late in the boil as well as in the fermentation tanks. This dry-hopping gives the beer a bold hop aroma and flavor. We chose to use Cascade hops exclusively for a bitterness that are very clean, and also for their citrusy and floral aromas. To balance the attack on the senses the hops wage, we use a special blend of toasted and crystal malts, which add depth of flavor and color, and ensure that the hops are not the only thing you taste. We finish this brew with a few pounds of roasted barley to get the perfect dark amber color.

Poured a hazy amber color with a white head. Let minimal lacing as it went. Aroma was grapefruit, spruce, pines and grass. Flavor was hoppy with pines, citrus and hops. Oily and sticky mouth feel.

Sample at Autumn Festival of Ales - Hoppy nose, citrusy hop palate, some depth in flavor. I’d have it again.

Growler from the brewery. Dark amber with a light tan head. Big citric and floral hop aroma with just a hint of caramel. As the aroma promised, this is a very hop-forward IPA, lots of grapefruit bitterness, but it does have a touch of honey-like sweetness in the background. Long, bitter finish. Pretty full bodied, nice smooth carbonation.

(draft @ 2006 Autumn Festival of Ales - Honeoye Falls, NY) Dark amber in color with a thick tan head. Aroma is really hoppy with lots of floral notes and some citrus. Flavor begins with some hops and then a caramel malt middle and a lightly floral finish. Not too bad.
