The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (variety Prune de Namur or Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 is made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl.

UPDATED: MAY 15, 2013 Zythos Bierfestival 2012, Leuven, Belgium. Big thanks to Sebletitje for this. Sebastian ROCKS IT as usual. It pours opaque looking copper with loose tan head. The aroma offers up faint musty prunes and modest sour and tart notes moving toward some woody notes. The taste begins tart and moves into sour notes nuanced by vinegar and fruit skin like tannins. It then heads into a dry finish thinly ringed around the edges by a light sense of some sort of vague fruitiness. Could use a bit more prune influence in the taste. Good stuff nonetheless. Can’t wait to try one with a bit more cellar time. Lovely brew. I’m really enjoying this brewery.

Bottle to tulip (batch 2) Funk, grape, plum, cedar, overripe apple...exquisite. Opaque bright amber with no head to speak of, but lively carbonation. There are some small particulates in the glass, most were left in the bottle. Bam...sour...barnyard funk...plum...blackberries.

Bottle. Pours golden with a white head. Aroma is funk, sour, plums, grapefruit and plum. Very refreshing taste which has alot of dryness to it. Very nice

Bottle, 2014/15 vintage. Hazy/murky copper with a small white head. Mouthwatering nose has barnyard, grapes, hay, band aid, oak. Flavour has all the same thing with some pepper, must, lemon and flowers. Medium/full body, fine soft carbonation, some sweetness and firm sour. Starts soft and sweet then the sourness kicks in and slowly fades. Long finish with wood and funky notes. Really good. The plums totally evade me, there is some almond like things and perhaps if I stretch my imagination, some brown fruit. No plums.

37.5ml bottle from the Grove, Huddersfield, drank at home. This is so great - and quite difficult to pick out individual flavours. It seems so harmoniously well rounded. Quite tart, sour candy. Quince/plum/geuze aroma. Bit of cheese/funk aftertaste. Lasting tartness. Interesting appearance - minimal head, amber with a purple tint and lively bubbles. Oh my goodness. Tilquin is possibly my favourite geuze anyway, and this definitely doesn’t disappoint.

Celebrating that we are homeowners in a month. Hazy amber body with a medium white head. Tart, funk, barnyard, yeast, vinegar, fruity. Again Tilquin blow me away!

Bue en bouteille de 37.5cl à la maison, couleur ambrée/prune, effervescence bien présente mousse bien présente mais déliquescente. Nez énorme sur la prune et la questche. Attaque en bouche sur la gueuze acide et citronnée, continuité très bien balancé sur la quetsche la prune et le sucre. Ensemble ultra équilibré sur une bouche sèche.

31 Aug 2015, bottle. 2015 version. pinkish orange and faintly cloudy. nose is nice tilquin sour with floral and plum notes, plenty of funk. thin body and faintly fizzy. dry sour, cherry pits, woody, funky, with hints of plum or blue fruit. Very nice.
