The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (variety Prune de Namur or Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 is made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl.

From bottles, at the brewery. Hazy orange-amber with the impression of a pinkish hue. Nose of plum liquor, lemons, grapefruits and must. Sparkling and tart, floral and juicy, with the suggestion of red-grapeskin tannin. Finishes dry. That perfumed impression of fine plum schnapps is pleasant and stands throughout. Superb piece of work, an interesting and somewhat intense drinking experience.

From a 12.7 oz. bottle purchased at the Beer Trappe in 2013. Pours a cloudy apple cider with a scant off white head. Funky barnyard nose. Flavors of prunces and tart cherries. Sour, earthy finish. Nice.

37cl bottle. Hazy orange pour with a thin white head. Smells like vinegar, macerated grapes, prunes, barnyard funk. The taste follows the same notes, very sour and acidic. Medium bodied with low carbonation and a vinegar and unripe fruit sour aftertaste.

Fra flaske på Mi2, Cardinal (Asko Rogaland ølmesse): uklar mørk korngul med kort skum. Sursyrlig aroma og smak (brett og citrus) med en knusktørr slutt. Slank og samtidig med en intens og tydelig personlighet. En høyst påkrevd overhaling av gane og tannstilling akkurat nå - midt i løpet denne flotte junikvelden. Takk til Tom og Cardinal!

750 ml bottle, thanks to Willrunforbeer on the share. 2014 vintage. Aroma is acidic with a mild sweetness that I perceived as fruit. (without reading the description of the lambic)

Flavor, is barnyard / hay, over ripe fruit, weak grass notes. The sweetness starts, it becomes tart with a pucker, but the fruit comes back and makes it sweet again. Plum is notice by me as fruit but never would have guessed plum. Overall, pretty impressive.

2014/15 750ml bottle from Hunger Mountain a long time ago. Pours orange brown gold with a greyish off white head. Aroma is plum, mild acetic, barnyard funk. Starts soft, then tarts up towards the finish, with plum skin, lemon, oak.
