The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (variety Prune de Namur or Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 is made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl.

Bottle with a best before of 29/01/2023. Pours with very low carbonation, no real head formation. Deep strawberry hued body with medium-low clarity. Aromas are of plums, jammy, medium vinous, wet wood, rhubarb pie, mild brett, earthy, musty. Very fruit forward, mild skin tannins. Flavors are very tannic, huge jammy fruit, plum, light baby food. Acidity is medium and about as strong as the tannins. Medium funk, wet hay. Juicy. Low carbonation. Mild cheesiness. Lots of tannin, thicker body for a lambic. Could use quite a bit more carbonation to help with brightness and carbonic acid. Good, but I’d take the gueuze over this any day of the week.

Bue en bouteille de 37.5cl à la maison, couleur ambrée/prune, effervescence bien présente mousse bien présente mais déliquescente. Nez énorme sur la prune et la questche. Attaque en bouche sur la gueuze acide et citronnée, continuité très bien balancé sur la quetsche la prune et le sucre. Ensemble ultra équilibré sur une bouche sèche.

31 Aug 2015, bottle. 2015 version. pinkish orange and faintly cloudy. nose is nice tilquin sour with floral and plum notes, plenty of funk. thin body and faintly fizzy. dry sour, cherry pits, woody, funky, with hints of plum or blue fruit. Very nice.

I smells of plum with a background of barnyard. The color is redfish, plum orange..cloudy. The taste is very fresh lambic with a hint of fruit, plums, a almost citrus like sourness . Very complex palette, long aftertaste sweet and sour . Overall a great beer.

Bottle. Pours hazy blood orange golden with small soapy white head. Aroma is dusty, deep, grapes and some ginger. Fruity, brett, spice, oak, hay, horse, sweet pale malts, sweet wood and leaf. Taste is fruit tree, some malt, sweet prunes, deep, mellow then turns lemon and lime. Light body and dries out the lips.

Pours a very interresting blood pink orange color with minimal white head Aromas of sour green apples, citrus, grapes, cracked garden branches, sweet fruit Taste has very nice tones of fresh sour lemons, grapes, green apples, hay, sweet fruit Very sour, medium bodied, medium carbonation, almost no bitterness.
