The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (variety Prune de Namur or Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 is made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl.

Bottle with a best before of 29/01/2023. Pours with very low carbonation, no real head formation. Deep strawberry hued body with medium-low clarity. Aromas are of plums, jammy, medium vinous, wet wood, rhubarb pie, mild brett, earthy, musty. Very fruit forward, mild skin tannins. Flavors are very tannic, huge jammy fruit, plum, light baby food. Acidity is medium and about as strong as the tannins. Medium funk, wet hay. Juicy. Low carbonation. Mild cheesiness. Lots of tannin, thicker body for a lambic. Could use quite a bit more carbonation to help with brightness and carbonic acid. Good, but I’d take the gueuze over this any day of the week.

375 ml bottle from Tanakaya. 2013-2014 vintage. Poured into a snifter. Hazy deep amber golden color a small off-white head. Huge plum nose along with vinegar, wood, hay and pear. Quite tart with a nice fruitiness that wasn’t in the gueuze. The plum really stands out. Medium body with a average to soft carbonation. Tart finish that lingers, but isn’t intensely sour. A lovely beer.

Tried in bottle. Bought in Austria at Tribaun. Colour is hazy amber/brown. Almost no head. Aroma is tart, sour apples and funky lambic smell. Taste is funky, subtle plumbs, fruit and tart fruit. Nice carbonation. Good lambic but not too sour. ---Rated via Beer Buddy for iPhone

Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de fruitée sûrette avec une pointe de céréales. Durée moyenne de l’arrière goût. Alla spina ZBF 15. Aroma di cantina, fruttato, le susine si sentono molto poco. Al palato spiccatamente dolce con finale acido.
