COMMERCIAL DESCRIPTION
The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (variety Prune de Namur or Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 is made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl.

Small, but relatively stable yellowish-beige head over fully cloudy orange-ochre beer. Farmyard odour, hard leatherfat, citrus (lemon especially); only very faintly fruity, all the more gueuze-y. Sharp lemony flavour; flowery, fruitzeste, again - if restrained - leatherfataroma as a flavour. Finish is rather abrupt, just the lemony sourness tangentially fleeting. Sharpish, very tart, dry-out effect to quite some extent. Maybe medium bodied still. Phenomenally refreshing. Just as experienced with other (non-lambic) quetche beers, there’s not a very distinct, recognisable fruitflavour. What remains is a superb lambicbeer... bettering all the time @ Tilquin. 375 mL bottle from Wine Warehouse. Hazy amber, thin head. Aroma of funk, pepper, dry plums in the finish. The taste is tart jammy plum, bright citrus, tart and funk. Medium bodied, high carbonation, lingering tartness. Nice.

Its sunny day, after hard yesterday, drinking this in my garden.. feels godlike :P Nice maltiness, quite huge fruitiness, tart plums, some sweet/sour berries like strawberry, oaky, reminds me of compote. Quite dry finish. Moderate to light sweetness, moderate sourness. Very well balanced and highly drinkable.

Voilà LA bière qu’il me fallait boire par cette canicule incessante! La bière dans mon verre est pâle, translucide et affiche une robe claire aux teintes de pêche et bien sûr de prune; ingrédient intervenant dans son élaboration. Nez délicat de fruit qui pourrait s’apparenter à un raisin bleu, du bois. Je sens et je vois ce bouillonnement nerveux se produire dans mon verre est les arômes émanant de cette effervescence sont minérales et vives! En bouche, tout se déroule en subtilité. Le pétillement n’agresse en aucun temps mon palais charmé par ces saveurs acidulées, fruitées et légèrement boisées d’une magnifique Gueuze brassée avec savoir et raffinement. Un succès auprès de tous!

Cloudy orange body, very small white head. Aroma has sour berries, redcurrant, some sweaty notes. Flavour has strawberry? and surprisingly sweet berry. Very nicely balanced. Can’t feel my gums.

Orange, trüb, grapefruitsaftfarbe. In der Nase Pflaume, Balsamico, funky, Heu, Säure, Grapefruit, Kupfer, Stinkekäse. Am GAumen mittlere Säure, Pflaumenhaut, Zitrusnoten, BAlsamico, Holz, Kupfer, Heu, Himbeere, komplex. Rund, süffig. Sehr lecker.

(375ml 2014 bottle from A la Biere Comme a la Biere) Pours very hazy peach colour with a tiny ring of bubbles and no lace. Aroma fruity with some plum skin, raspberry, lemon, lactic, oak, musty funk, mineral. Tart. Palate is tart and medium sour lactic, lemon juice and zest, herbs, moderately high oak, some pit fruit skin character, light musty vegetal funk. Dries in the finish and aftertaste with oak, dry earth, old hops, a bit funky, and here the plum comes out - the tart puckering skin and outer layer of flesh. That lingers in the aftertaste. Lightish body with almost no carb, slick. It’s tart and fruity without being nearly as fruit forward as most fruit lambics are, more like a "fruit gueuze". Has that lovely rounded Tilquin character. Drinks very nicely.
