375 mL botte from the brewery, rural location, shared at a tasting. Hazy golden, large foamy off-white head, good retention. Aroma of pale malt, yeast, tropical fruit, mild wood. The taste is pale malt, lemon, yeast, mild oak. Medium bodied, mild lingering tartness.

Bottled. Pours hazy pale golden with a large white head. Aroma of grapefruit, pineapple notes, wood, funk and yeast. Slightly sweet flavor that ends up dry and quite tart. Light to medium bodied, watery texture and soft carbonation. An excellent Saison. 🌟🌟🌟🌟

Clearer and darker than the regular version. Pours a pale golden yellow color with orange/banana hues and a 1.5 finger white head that slowly settles into a thin, lasting ring. Spotty lacing left behind. Musty, funky aroma with a really strong brett presence. Strong oak presence with lots of funky bugs and farmhouse/saison character followed by bready yeast, slight zesty spice and sweeter light fruit notes. Medium bodied with a nice brett presence but it’s well integrated into the farmhouse and pale ale flavors. Not as overpowering as it was in the nose. The barrel character in subtle with some dry oak/toothpick flavor. This is followed by dry, musty brett, grass, straw and light fruit flavor, notably apple and pear. The light fruit toward the end of the palate balances things out nicely with some needed sweetness. Overall, this was a bit more interesting than the base version. The addition of wild yeast and oak aging give this beer another layer of flavor without overpowering what was pleasant about the regular version.

Bottle. Hazy glowing gold with 2 finger white head. Citrus, oak, vanilla, light funk and grain. Creamy mouthfeel and light carb. Awesome.

Very light gold with some slightly deeper marigold tints and a large white head that slowly recedes to cover. Good clarity.
Really fun nose is all sorts of funky, musty, sort of generally mousey bacteria/brett goodness. Not terribly sulfury, but more the wet blanket/wet sheep/damp cellar funk. Some light fruitiness breaks through, a touch of pineapple-meets-cherry as well as very minimal wood character contributing a touch of vanilla. A real delight to just continually sniff the stuff, especially as it continues to warm up. Wonderfully subtle and elegant, as always, from Oxbow.
Similar flavors, matching the aroma, show a bit more leathery brett-like funk, dry pineapple, appleskin, cheese and a bare afterthought of pale malts. Sadly, it’s extremely dry and normally, Oxbow’s beers have a tightly carbonated, near creamy texture that would have helped balance the dryness, but not so here. Rather watery, very loose carbonation and poor malt structure really disappoint. Some light sourness and wood tannin, not at terribly high levels, are nonetheless problematic on account of the very low malt/extremely light body. Perhaps my other bottle will show better carbonation!

750 mL swing top bottle poured into a snifter. Hazy yellow. Nice white head. Great retention. Smell is bretty and oaky. Some farmhouse funk. Some hops. A bit of acidity. Very nice. Brighter acidic flavors in the taste, but nothing by way of sour. Grainy. Hops are muted. Grassy and lemony. Nice but not as complex as the nose. Light, well carbonated. Easy drinking. Delicious. Gets more acidic as I drink it. Less complex, too, but still good.

Poured a hazy lighter orange color with a white head. Aroma was of brett, pitted fruit, light funk and grain. Flavor similar, lightly tart even, brett c forward, juicy, really drinkable.
