Poured from a bottle shared by the cinci crew. Pours a semi-hazy gold with a white head of foam. The aroma is that signature brett, earthy dryness on the verge of tartness. Taste is just barely tart with an earthy sweetness and bitterness. Dry finish. Really a good beer.

In short: A rustic, tart, acidic and oaky Saison-like ale. Good beer.
How: Tap at Hill Farmstead Farmhouse Saison Festival 2012.
The look: Cloudy blond body topped by a small white head.
In long: Nose is musty, a bit of funk and with plenty of oak barrels but not a bourbon character (I was told the barrels were bourbon, might be wrong). Taste is I very rustic, sun dried straw and hay, dusty attic, musk, salty/minerals sensation, fresh virgin oak, apples, lemons, bananas, ripe citrus fruits, a bit of funk. Razor sharp finish that is rather tart and dry with a fair amount of acidity. Not sure what happened to the “Pale Ale” part of the beer here, this to me was a truly rustic Saison even though its present ratebeer style is simply Belgian Ale. Enjoyed at the Hill Farmstead Farmhouse Saison Festival where I had way too much to drink, and if at a beer festival you have never been voted "Most likely not to live to the next year edition of the festival" than clearly we don’t have the same lifestyle.

11/14/12. 750mL bottle thanks to Lukaduke - thanks, man! After popping the cap, the foam slowly starts to rise to the top - but we had glasses handy. Hazy golden pour with a big off-white head that cuts but laces plenty. Nice funky, lightly tart aroma with plenty of lemon and a bit of wood. Really nice flavor with more funky tartness, lemon, citrus, funk, yeast, a bit of wood, and touches of pale malts and grass. Tasty and drinkable - I would drink the shit out of this if it were near me and cheap. I shared this with a few other people and they agreed it was tasty and they were going to seek out other beers from this brewery. Thanks, Luke!

On Tap at Eb’s Pours a slightly hazy deep golden color with a fleeting off white head that leaves some stickage on the way down. Smells of lemon and funk with bits of wood and bready malt deep underneath. Earthy, bready, lemony, funky flavor with bits of wood. Medium body with a moderate level of carbonation and a tart mouthfeel. Interesting brew. A funky pale on wood sounds like its going to be a mess, but somehow it all melds together nicely and it just works.

Pour out of 750 mL, thanks Dave! Very hazy orange yellow pour with thin but lasting white head, thin bubbles, aroma has notes of oak, pear, peach hints of spice, grassy notes as well with a touch of crackery biscuit, white grape, hints of earth. Taste is a nice mix of very funky and earthy brett, some pineapple, grape, hints of white fruit, very spicy grass hints of slight tart, finishing fairly dry and funky. Very tasty.
