The head is layered, with beige bubbles below and white froth on top. The nose is horseblanket, vinegar, tart cherries, lactic acid, wet wood and cheesy cider. The inital flavour is bright, sour fruits, dust and earthy hops, then finishing with balsamic vinegar, musty cheese, oak and vanilla. This is an insanely complex and balanced sour ale. The palate is silken with gentle carbonation and a chewy body. Pours a light red wine color with a white head. Smells like a sour and has a sour taste that is not over the top like some other sours I have tried. Pours hazy mahogony color with a smallish ring of light tan colored head. Aroma is oak, earthy, acetic, balsamic. Flavor is oak, vanilla, earth, balsamic, tart cherries, dark fruits. Palate is medium to light bodied, medium carbonation, finished tart/sour. Delicious, can;t believe it has taken this long for me to try one. it will be a staple now!! More wood shone through (duh) and mellow, not at all lip-puckering but purely Flemish sour as gorgeous and refined as Rodenbach Alex. I hope it ages well. I’ll keep my around for a while. Thanks Justin! 2007 vintage. Red amber color. Sourness is mild. Some lactic aroma. Malty caramelization. Easy to drink. Light mahogany color, some initial white bubbles; the aroma is definitely pushed to the acetic, balsamic side with some oak-aging noticeable, but nothing spectacularly prominent. Really similar to Duchesse I thought. Medium sourness in the flavor, with notes of toasted biscuit, lemon and earth. Very dry finish and a good amount of carbonation. Pours a deeper brown with ruby red notes and a medium creamy/bubbly off white head. Aroma of tart cherries, slight vinegar, oak, vanilla, dark fruits and light nuts. Flavor of vanilla, cherry skins, oak, light funkiness, dark fruits and some vinegar.
