Commercial Description:
The Paulaner Salvator with its strong, typically malty taste is the original Paulaner. The bottom-fermented Doppelbock-Bier unites the finest hops and dark barley malt. The Paulaner monks served Salvator as a replacement for food at Lent. Their most famous brewer was Brother Barnabas, who was the head of the Paulaner monastery brewery starting from 1773. Its original recipe is today almost the same as it was in Barnabas' time. In order to protect the original recipe, Paulaner had the trade mark "Salvator" patented in 1896.

Bottle. Pours a clear copper with a one finger tan head. Nose is caramel malt and dark fruits. Palate is sweet – caramelized sugar and prunes with a slight dry alcohol finish. Creamy mouth feel. Not my favorite style, but this is a decent spokesperson for it.

12oz bottle from 12/07. Pours surprisingly light (for the style). An amber color with a small white head that quickly drops to just cover the surface. Aroma is sweet, clean, with some nice hot melted caramel smell and candy. Like a subdued barley wine. Slight breadiness. Taste is moderately sweet with some subtle dark fruits and a quick finish. Medium bodied. Easy to drink. I am not a huge fan of doppelbocks but this is pretty good. It’s no Celebrator though.

deep amber. smells coppery, malty, oaky. taste is a whole lot more interesting. carmel, raisin, hops disguised as bourbon, nutmeg. for its robustness i expect it to last longer. could be softer on the tongue. flavor steals the show.

12 oz bottle from Total Wine in Jacksonville, FL. Bottle marked "made on 10/07" on lower right of label. Pours a nice light copper color with a small head. Aroma is robust with malt; taste is rich and full, and delivers a nice doppelbock taste. Great beer.

Light amber with thin diminishing head. Aroma of sugar, caramel and bread. Taste is more of the same, overly sweet. Light notes of fruit in the finish.

Full malt backbone. Not too much carbonation with lacey pour. Low bitterness. A flowery sweetness in the first sip. I like it, and always have. A model of consistency from year to year.

6-pack from Total Wine, River Edge, NJ...bottle pours clear copper with an off-white head...mildly sweet aroma, kind of like candy corn...flavor is mildly sweet too, malts, bit of a metallic aftertaste...kind of reminds me of the "Old Speckled Hen" but better...this is the fourth Doppel I’ve rated (not OSH which is an ESB) and they’ve all been drastically different...keeping me honest...
