I don’t like the fact that Simcoe is a registered trademark, personally I am against trademarking varietals of plant. But that aside, I really do like these hops. Aroma intensely fruity, like apricot but lighter, almost estery but more lasting...fading into a faint piney quality, and a light, sweet graininess. Flavor is bitter up front with sweet finish, but leaving a lasting bitter taste as well. Pleasingly light for the sweetness. Most beers this sweet are bogged down with sourness and are overly heavy. This brew is simultaneously sweet, bitter, and light, and I love it. Very well-executed.

12oz bottle. Small off-white head atop lightly hazed light amber body. Aroma is medium sweet, grapefruit, pineapple, some passionfruit, orange. Taste is moderately sweet, grapefruit, some catty, pine, light orange, bread. Light-medium body, light resin.

Pours a soft straw yellow with one finger of creamy white head. Nose is strong and hoppy with pine and citrus notes and a lightly sweet malt character. Flavor is slightly spicy wit lots of grapefruit rind and some caramelly sweetness. Dry palate with a medium bitterness.

Comes out of the tap a clear orange-amber with a thin white head - this may be an artifact of the pour. Surprisingly hoppy aroma has hints of malt and honey. Hoppy flavor has a slightly sweet malty tone plus woody and fruity hints. Smooth, strongly tingly texture leaves a persistent woody/hoppy fizz.

Draft at the Dutch last night with the family for dinner. Fruity nose of malts and hops does say spring to this seemingly endless cold winter we have had. Hops and malts up front are medium bodied and wake the mouth from slumber. Body fades to a weak single flat tone of hops for finish. More malt in this area would smooth this critter into a real gem.

Bottle. Pours a copper toned body with a white head that quickly diminishes. Grass y and bittering body with a a light spruce and earth tones. Herbal with hints of pine and a dry finish. Soft carbonation light body easy drinking but only slightly above the middle of the road.

12 oz. bottle, best by August 2011 and consumed fresh in March. Pours a very lightly hazy, dark orange-amber color with lively streams of effervescing micro-bubbles. A small but dense head of eggshell tinted foam is super creamy, lasting a good long while. Tall, fat lacing flares sprawl out, clinging hard to the glass, accompanied by a wide spray of small spots. The nose is classic Simcoe, very catty and dank, suggesting of some drying pineapple and fruity orange rind. Underlying malts are lightly toasty and dry, with a white bread tinge and a very faint hint of sourdough. Flavors follow suit, based in dry cereal grain and toasted white bread, balanced by catty, grassy bitterness and suggestions of dried tropical fruits and pine. The palate is easy going, shy of medium bodied, and peppered with soft carbonation, making it quite quaffable and even refreshing to a point. Good brew. As much as I dislike Simcoe hops in mass quantity, this one is light enough, showing just enough restraint to suit my tastes.
