We love the piney, fruity flavors of Simcoe® hops. This is a classic pale ale, with a generous dry hopping of Simcoe®. Because of the restrained malt profile, the hops really pop, like flora in spring.

Tap. Golden with foamy cream lead and decent lacing. Smells piney/grapefruity. Light bitter flavor, with a hint of grain, and a hint of butteriness. Not quite crisp, moderately carbonated, light dry finish.

Associated Supermarket, Bushwick sixer ($11): Pours a copper color with a white head. Aroma is pine with some nondeScript citrus bordering on lemon, along with pale malts. Taste is bitter simcoe throughout without much else happening. The maltiness is pretty lame. Nice pine, but without anything to back it up, this is just not interesting. Minimal aftertaste. Medium-light body. Meh.

UPDATED: JUL 8, 2013 Draught at Stags Head NYC. Pours slightly hazy orage/gold/apricot in color with a big white head. The aroma was an intense citrus hop smell, really nice. There is an overload of grapefruit in the aroma as well as the taste, which I love. Incredibley balanced with a piney citrus finish. really comples and smooth finishing. A great pale ale.

Cask at ACAT. Pours a clear gold with a white head that dissipates to the edges. Aroma has a good amount of grassy hops with a bit of pine, a touch of onion and a grain back. Flavor starts with light grain and becomes grassy with a bit of pine and resin in the finish.

Previous notes...pours light honey amber with a crisp white head. The aroma is that of a floral spring presence. The flavor brings light hoppiness on a crispy refreshing body.

12oz bottle in a sampler glass. Pours amber with an off-white head. Aroma of citrusy and piney hops plus some caramel and pale malts. Flavor the same with a good amount of hope for the style. Average texture. A nice hoppy pale ale.

Bottle from Whole Foods in Folsom, CA. Pours amber with a 3 finger creamy beige head. There’s a nice roast malt backbone with a lot of resin and some citrus. It has a certain lushness in the mouth. It finishes very bitter. What’s not to like?

12 oz bottle. pours an orange color with a 2 finger white head. pine / citrus / honey Simcoe hop aromas - I generally prefer other hop varieties - but the Simcoe is shining well here. med body - somewhat sweet with caramel malts, but the Simcoe hops dominate throughout with a nice piney and citrus bitterness. finishes nice and dry - very well attenuation. extremely drinkable. nice bitter lemon / orange finish.

Pours a dark amber color with a bubbly off white head that gets a little sticky. Smells of pine and lightly herbal but mostly pine. There’s a bit of caramel in the background. The maltiness is a bit more pronounced in the flavor. There’s a solid rich bready caramel malt backbone to play against the pine and resin and herbal flavor coming from the hops. The taste is light crisp and refreshing. Medium body with a hefty dose of carbonation and a bubbly sweet mouthfeel. This is a nice flavorful beer, albeit a little on the simple side. If I had to knock it I would say that there is a hair too much carbonation for my liking.

Pours a clear gold with a medium white head. Aroma has lots of pine and just a hint of grapefruity citrus. Flavor is mostly pine and spicy hop notes...touches of tea and light malt backing. Mouthfeel is light and lively with a dry spicy/tea bitter finish.
