Aged? Many beers have a long maturation, but this one has only 24-36 months in oak barrels. Pale? This beer has an old gold to bronze color, rather than the burgundy more common in the breweries of West Flanders. This is the ‘mother beer,’ used in various quantities to blend with the other Petrus beers, and to give them their unique and very distinctive taste. This mother beer is rather sour with a bite like the best Brut Champagnes. A connoisseur’s delight! The only one of its kind on the U.S. market.

Super light gold colour with a medium-small white head. Green apple like aroma. Really nice sour flavour with more of that green apple and some wine like dryness.

Pale blond color with white head. Yeasty belgian aroma with some floral, oak tones. Moderately sour and a little acidic. Not bad, though I wouldn’t want to drink this in quantity.

This was only my second Flemish sour, and I was not nearly as impressed with this as my first--Verhaeghe Duchesse De Bourgogne. Poured to a golden pale vcolor wityh medium fluffy, head, decent lacing and lots of carbonation. But whereas the Duchesse was a nice mix of sour early, and sweet later on, this was strictly sour, from start to finish. Aroma of sour green apples and vinegar, carried over into the taste and finally the finish. I actually like Flemish Sours, but this one is not my favorite.

Light gold color with a heavy white head. Awesome sour apple, vinegar aroma. Great tart taste filled with apple, grape, cherry, and pine. Full of cheese accents, with a excellent mouth puckering ending.

33cl bottle at Corner Bar, Beijing. Pours clear golden yellow with a thin white head. Lambic type aroma. Sour taste. Sour finish. Very nice.

UPDATED: MAR 21, 2008 Bottle. Golden with vague white head. Sour and fresh aroma with fruit and a moist feeling to it. Flavour is sour, prickling, fresh and sweet with a smooth bitterness. Also apples and cherries. 6-2-5-3-11 (2.7) Re-rate, 22nd of march 2008: BB 18/10 2007. Clear golden with ok off white head. Some apple in aroma and a woody character. Flavour has a more balanced feel to it than last rating.

Clear yellow colour with a low head. Very sour aroma! Vinegar and oak. Flavour of dry, sparkling vinegar and fresh pieces of wood. Extremely fresh. Perfect after a couple of stronger beers or on a hot summerday.

Golden brown with white head. Fruity aroma with notes of acid, iron and chocolate. Acidic flavor with notes of rocks, iron and spices.

From a 11.2oz into a snifter. Pours a very frothy pale yellow (nothing special) with a ton of fizzy head. The head dissipates after a few minutes leaving minimal lacing. Nice mild floral aroma. Mouthfeel is very fizzy; too fizzy in my opinion. Taste is very tart like a sour should be. The first taste is POWERFUL. Good floral flavor with some oak flavor as well. Very worth trying and a very solid sour.

Shared bottle with fordest at O’briens. This trip turned out to be about the sours. Very nice sour smell and flavors of sour cherries and maybe some wine like qualities. This is becomming one of my favorite styles.
