Aged? Many beers have a long maturation, but this one has only 24-36 months in oak barrels. Pale? This beer has an old gold to bronze color, rather than the burgundy more common in the breweries of West Flanders. This is the ‘mother beer,’ used in various quantities to blend with the other Petrus beers, and to give them their unique and very distinctive taste. This mother beer is rather sour with a bite like the best Brut Champagnes. A connoisseur’s delight! The only one of its kind on the U.S. market.

On tap at Sister. Tastes like old beer, and by beer, I mean that iconic Old Peculiar like beer taste. I thought I liked it for a little bit, but the more I drank, the more I found it the slightly vinegary staleness to be unpalatable. Some soy sauce.

Bronze colored, clear, small off white head. Really amazing aroma, overripe fruits, citric notes, some oak, some candy caramel, some sourness but nothing compared to the flavor. Taste is low to medium sweet, quite strong sourness, acetic, fruits, citric, woody notes, moderate bitterness, dry finish. Medium bodied, silky, moderate carbonation.

Golden, nearly clear, with a small frothy head. Aroma is citrusy, a little woody. It is dry and very sour, with a good bite from the carbonation. Good and interesting for the sake of beer art, but not as complex nor refreshing as a geuze.

F: white head frothy, not long lasting. C: hazy gold colour. A: wine, earthy yeast, wood, hint of lemon. T: very special dry earthy, vinous, grapefruit, vinegar sourness and dryness on the palate, some woody tones, leather, tart fruit, medium to complex body, good carbonation, nice dry end on the palate, very good one for this style, worth to try.
