3.6 AROMA 8/10 APPEARANCE 3/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20
Dating: Best before 1997. Obviously a little aged beyond the brewers recommendation. Pours very cloudy yellow with just a hint of head. Lots of malt and sugary sweetness in the aroma ... along with cookies and cotton candy. Maltier than many tripels (although that might be because of dimished hops due to age), lots of yeast floral and a little alcohol flaovrs. I would like to try this next to a fresh sample, but the aged holds up fairly well.

3.5 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 3/5 OVERALL 14/20
Huge rocky and lasting head over a cloudy yellow beer. Fruity, spicy, lightly sour aroma with abundant pear/apple character. Lemony citrusy smell here also. Light-bodied, with loads of apple/pear fruit and spice. Quite good, but lacking in complexity.

3.2 AROMA 7/10 APPEARANCE 3/5 TASTE 6/10 PALATE 3/5 OVERALL 13/20
Bottled. Purchased at Dickies Beer & Grillhouse. Amber body with a medium white head. Nose is flowery and hoppy with a light spice profile and some yeast notes. Mild fruit as well. Taste is spicy and fruity with wheat and yeast notes. A pretty much "standard" tripel. Maybe faint honey hiding in there as well. Body is fully carbonated with a spicy feel to it. Finishes yeasty and spicy with more fruit notes and light wheat.

3.2 AROMA 8/10 APPEARANCE 3/5 TASTE 5/10 PALATE 4/5 OVERALL 12/20
10.02.04 250ml bottle. Hazy golden yellow, massive white head fades to creamy coating. Aromas of apple, melon, honey, canned pineapple. Flavor is sweet up front and across the middle. Nice tingly eff. Slight unctuousness to the hops makes for a spicey finish. Wheaty. Vanilla. For a tripel, it could have more depth, although it’s a quite tasty brew. I could surely go for a larger bottle.

UPDATED: SEP 8, 2008 Pours a cloudy yellow hue with aromas of caramel, honey and spice. mouth feel is medium bodied with flavors of caramel, roasted malts, smoke, honey, aged hops and more citrus. This is actually a very tasty brew. Probably the best I have had from this brewery. Very nice.

3.4 AROMA 8/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 13/20
Decent white head with light carbonation. Reduces slowly and quickly reforms upon swirling. Nice fruity aroma with oranges and peaches. Bit of wheat and yeast also. Color is a cloudy gold. Flavor is fruity with a zippyness in the mouth from the carbonation. Dry and slightly bitter with a nice alcohol flavor. Not much spices present. Finish is warming from the alcohol with a nice dry mouth. A decent, fruity triple without all of the spice.

Some dusty and pill bottle aromas. Odd but good nose. The appearance is a cloudy yellow. The flavor is sour lemons and vanilla. A pretty good funky triple.

I guess, having paid what I did to acquire this at a specialty bar, I was expecting something more complex. This does have some sweet white wine (champagne?) notes and is quite dry for an abbey tripel. Some herbal, citrus, yeast notes. I recommend not including the yeast sludge at the bottom.
