COMMERCIAL DESCRIPTION
Caramel Red-fermenting beer. This child of the Peter Family Christmas is only brewed in November. Its mild flavor is the perfect starting point for pleasant holidays.

Bottle pour. Cloudy reddish brown with a medium tan head. Aroma is sweet dark fruits, spices, cinnamon, and caramel. Full creamy body. Sweet dark fruit taste with light malts.

Bière de Noël au caractère flamand bien prononcé BB 05/11/2015. Nez fort caramel, malts fort rôtis, réglisse, un petite acidité, pas d’amertume. La bouche est bien lourde en sucre avec un goût de caramel très fort accompagné de réglisse; donc fort ronde légèrement surupeuse voire lactée. La fin est doucement acide, presque pas d’amertume. Ses malts de froment torréfiés, associés aux épices, la réglisse notamment, développant des saveurs de pain d’épices, rendent cette bière assez spéciale. Le tout très peu subtil en goût et en saveur sauf cette légère acidité. Eventuellement.

Beautifully packaged in a large red bottle (2013? BB date stamp of July 2015) with gold-colored wire retaining the cork. Served at a starting temperature of about 45F in a Belgian snifter. Pours clear and dark; a lovely red-brown color with a small head that displays good retention and coats the glass upon tipping. Aroma: appealing and faintly sweet and fruity over dark bread. Flavor: little if any spicing in the winter ale, but some hints of spicing from, I believe, the yeast. Starts lightly sweet and finished mildly bitter. Hints of dark fruits including dried plums and raisins, as well as toffee. Feel: smooth but a touch too much astringency. Appropriately soft carbonation.

Poured a dark copper red with bits of sediment suspended in the beer. There was a thin 1 inch tan head that disappears to just a film pretty quickly. The aroma had some sweet caramel, spices and a musty yeasty biscuit scent. The beer had a thin texture and a slightly sweet falvor up front. There was a little bit of a carbonation bite, but not too much else going on. The finish was rather dull. Not a very pleasing beer to me

Last 3 years taste this beer 5 times or more. 75 cl. bottle. Almost clear strange brown color, with a off white head. Aroma sweet, bit vegetal, dark fruit. Medium body. Taste: sweet, caramel, raisin, little spice, dark fruits, alcohol notes. Little hop bitterness.
