Gaia is an ice perry made from pears hand picked, crushed and cold pressed. No pear falls on the soil is added to avoid altering the flavors of a fruit at optimum ripeness. The sugars are concentrated exclusively by natural cold winters in Quebec, the so-called freeze concentration. The development and fermentation at low temperature span several months to develop a fragrance and flavor incomparable bouquet.

De couleur dorée et limpide, laissant des traces visqueuses aux parois lorsqu’on la remue. Ça sent la poire et la neige, ou peut-être le poire en sirop sur glace. Des effluves de miel s’harmonisent bien avec cette poire. Au travers cette texture sirupeuse, un goût de poires mûres, légèrement acidulé, qui auraient frayées avec un sirop d’érable dilué. Care of james, pours clearish golden with notes of grape, and weird sugars. Perfume notes and lacks the bite in the finish. Wish it had more apple or sugar in her.

Bottle at Ryan’s. Pours a clear golden. Aroma is grape, honey and thick lead concentrate. Mouthfeel is light with notes of pear, Apple cider and honey.

500mL split with GT2. Pours a deep gold, flat, great alcohol legs. Aroma is floral, honeysuckle, fresh cotton. Taste is concentrated, sugary deep golden pear and honey. Thicker mouthfeel. Sweet overall with a touch of tannin and slight acid. Doesn’t have quite the acid backing of ice cider. Flavor is outstanding still. Very nice to visit this farm in Quebec, one of the highlights of our trip.

>> Pours a crystal clear deep golden with decent legs. Really interesting perfumey aroma of bitter dried orange peel, lavender, fresh mint, rose water, vanilla. Taste is crystalline sugar up front, dense apple and baked pear, pie, lavender, tannic spices. Really interesting, much different than expected.

Bottle… Deep amber perry with centipede-like legs. The bouquet furnishes pear, honey and light methanol. Full-bodied and super creamy with no carbonation. The flavor offers sweet pear and wild blossom honey with only a rumor of acidity on the tip of my tongue. Finishes sweet and mildly fruity. Very good, but neither as enjoyable nor complex as their ice cider.

Bottle that I took a tasting at James’ place. Pours a clear gold. Gorgeous. Lovely soft pear and caramel. Velvety and smooth. Caramel, sugared pear, but so delicate, light cotton candy flavor. Oily, smooth and viscous. Super gentle and delicate. Almost falls off at the end, but as good as this is, it’s hard to knock it.

200ml bottle purchased at the "Salon des Métiers d’Arts 2010" in Montreal, December 12, 2010. Yellow gold, good trace. Sweet but very soft pear aroma. Taste of sweet pear juice, but not to sweet, slightly tart and effervescent. Well that was a good first perry experience, or a good first pear experience because I never eaten this fruit before!
