Brewers work with agricultural products that vary from year to year. Hops, malt, yeasts are constantly evolving and changing, so will this beer. The base style is an IPA and we will use the same yeast. However, as we use different hops and different malts, you will get to see, and taste the beer’s progression.

12oz pour at Piece. Vibrant orange, sandy ringed head. Powerful pine nose. Well worn up front malt with a sturdy bitter platform, sultry sweetness. Lip tingling grapefruit finish. Tight hop burn in the linger. Citrusy finish. Nice.

On tap at the source... Orange caramel hue, slightly transparent and topped with a thin creamy white head... Aroma of papaya and tropical fruit, some citra, and displaying a slightly sweet texture. Slight piney resin on The backend...citrus and papaya throughout with an equally balancing darker malt bill. Sweeter through the middle, moreso than needing with a lightly bitter pithy finish. Medium bodied with the expected level of carbonation. Not bad.

A golden IPA with a thin creamy off white head. In aroma, biscuit malt with grainy notes and light floral hops. In mouth, a light ipa with biscuit malt, grassy hops, light butterscotch.

TheAlum (6956) - Aurora, Illinois, USA - JUN 24, 2013
Draft on tap at Piece Brewpub (Chicago, IL). Pours a glowing amber copper blend, good mellow hazy feel with a deeper hue, nice sunset glow on the edges and bottom. A frothy whitish head atop dies to a film, laces small. Aromas are grapefruit, rind, and lemon. Some florals, citrusy vibrancy, some bready malts, a touch of sweetness. Floral and lively, some richer citrus as it warms. Initial is lighter end of medium bodied, a good solid grapefruit presence, rind and juice. Some bready malts, cereal, some straw. Firm florals, some good citrus as it warms. Middle is good firm grapefruit presence, faint kiss of tropical fruit, lemon and florals. Fruity and vibrant, good flavors. Backend is dry, firm bitterness, a touch of bready presence. Some gumball, tropical elements, and grapefruit. Finish is a good decent lingering bitterness, grapefruit, a solid IPA, a bit muddled at times. But the middle preaches a good fruity presence. Solid.

On tap at the brewpub. Pours a clear golden orange with a thick white head that lasts throughout the beer and laces. Aroma has a combination of citrus and light dank pine with an earhy grain backbone. Flavor has more citrus with a bit of earthy pine and resin towards the finish.

Draft, pours hazed golden orange with white head. Aroma has really heavy papaya, lychee, and gooseberry. Flavors are bright tropical fruit, big lychee, papaya, mangos. Very likely Mosaic and similar problems as society 6, lychee dominates and prevents this from being a more dynamic well rounded beer. Could really use more bitterness too, also some piney/resiny hop balance.

Draft at Piece. Pours a deep gold with a white head. The nose makes me think this may be mosaic hops. Tons of juicy tropical fruit, lychee, passionfruit, guava, mango and kerosene. Toasted malt background. On tasting, very fruity and juicy but nearing into an onion note. Some kerosene on the finish, oily and bitter. Pretty nice but just misses the mark a little bit overall.
