Tap at the brewpub. Purs very dark brown/amber with a beige head. Smells sweet and hoppy. It’s sweet and full bodied. Mildly carbonated. It is hoppy. Starts more sweet than bitter, but it becomes bitter as the sugar washes away. Killer ale!!
4 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 16/20 daknole (7204) - Scottsdale, Arizona, USA - APR 28, 2009
Tap at Piece. Cloudy brown pour wtih a very small beige head. Aroma is sweet, wtih toffee, fruit, syrup, brown sugar, zesty oranges, lemons and some dark dried fruits. Flavor is sweet and spicy. Hops shine through in this one more than I anticipated in the nose. I really enjoyed this. One of my favorites at piece.
3.8 AROMA 7/10 APPEARANCE 4/5 TASTE 8/10 PALATE 4/5 OVERALL 15/20 Ughsmash (6669) - Waukesha, Wisconsin, USA - MAR 7, 2007
On tap at Piece. Poured a dark, translucent plum with a light off-white head and nice lacing. Aroma picked up lots of sweet fruits, caramel, and other toasty dark sugars.. very sweet and very seductive. Flavor was of very heavy caramel and dark fruit at the base.. other sticky, toasty sugars, floral bitterness, and a bit of alcohol bite toward the back.. quite tasty! Creamy with well-placed floral and fruity bitterness. Great stuff!
3.7 AROMA 8/10 APPEARANCE 3/5 TASTE 8/10 PALATE 3/5 OVERALL 15/20 Cornfield (5276) - Oak Forest, Illinois, USA - MAR 5, 2007
Had I not been told differently, I might’ve pegged this as a DIPA. It’s amber colored with a small frothy head. The aroma begins with pine and grapefruit, gradually allowing caramel and alcohol to work their way out. A bit light bodied, but it presented a nice warm caramel, some pulpy fruits, and plenty of hop bitterness in the taste. Nice, especially after the folk at NotLA had us lined up outside on a cold winter night in Chicago waiting for the festival to begin.

On tap at brewpub. Pours a clear amber with a brown hue and a gray head that dissipates to the edges. Aroma has a sweet apple with backing sweet grains, caramel and a hint of toffee. Flavor is quite sweet with caramel and cookie with backing light fruit and alcohol.
3.7 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 15/20 TheAlum (4289) - Lisle, Illinois, USA - MAR 4, 2012
Draft on tap at the brewpub (Chicago, IL). Pours a rich brownish pour, touches of glow in the body show fiery light, but darker overall. No glow on the edges with a frothy tannish head, sits and laces small, a decent ring overall. Aromas are mellow oak and spirit, gentle sweet caramel, toffee, and oak. Touches of vanilla, spirit, and sweet toffee, touches of cherries. Initial is sweeter, full bodied with a healthy dose of cherries, sweet caramel, moving into gentle oak, spirit. Offering sweetness, a medium bodied that preaches caramel, toffee, toast, and touches of dark fruit. Gentle orange, mellow sweetness, spice is minimal. Fairly sweet, but balanced for the style. Solid, but not what I was necessarily looking for at dinner. Big brooding and firm, good flavors, rich darker malts, but not into the roasty realm. A true winter sipper.
3.4 AROMA 6/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 13/20 JaBier (3729) - Capital City, Ohio, USA - MAY 1, 2010
On tap at Piece. Hazy amber/brown pour with a medium beige head. Hoppy nose that’s slightly messy with some malt at the end. Grainy and caramelly malt flavor with some alcohol before a citrusy hop finish.
3.5 AROMA 7/10 APPEARANCE 3/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20 drewbeerme (3643) - Chicago, Illinois, USA - FEB 22, 2007
UPDATED: FEB 27, 2008 on tap, pours cloudy amber/copper color. served way to cold but eventually warmed a nice piney PNW hop nose came forward with some caramel. flavor was an a nicely PNW hopped caramelly bw. very tasty and enjoyable. alcohol was very well hidden. very fun to drink......another sample of this and it’s clearly not worth the 4 I once gave it. A nicely hopped American BW but nothing special.3.8.
2/26/08, 2008 vintage on tap at piece. the appearance wasn’t great as it was pretty murky dark amber with off white head. this version is nicely hopped but is rather vegetal and that overwhelms everything. did they sit on this too long? still enjoyable but wow this isn’t very good at all. i drank behemoth before and after this and it blew it away for sure 3.5.
4.3 AROMA 10/10 APPEARANCE 3/5 TASTE 9/10 PALATE 3/5 OVERALL 18/20 jrallen34 (3463) - Chicago, Illinois, USA - MAR 27, 2011
I had this on tap into a tasting glass at Piece. The look is a little down, light brown that is pretty clear and gives off an oily sheen. Light tan head not much there to speak of. This beer starts to get special on the aroma. Tons of sweet bourbon which is just so nice and easy to take in. There is a little oak and vanilla, and a bw finish of hops. The taste is pretty much the same and just as awesome. Superb sweet bouron and oak with a hoppy finish. Nice warm finish on the beer but a little light. Not sure I could drink a ton of this but give me half a snifter and at 13% all will be alright.
2010 is much much better than 2011.
