Le cidre brut accompagne parfaitement toutes sortes de repas. Plus alcoolisé et moins sucré que le cidre demi-sec, il constitue une boisson très désaltérante qui s’adapte à de nombreux plats. Plus gai que l’eau et plus léger qu’un vin, il donne à table du caractère aux poissons, aux lapins, aux volailles et même au foie gras. Servi bien frais, le cidre brut est aussi très apprécié à l’apéritif ou tout simplement pour se rafraîchir.

Bottle sample at a tasting, thanks rayaron. Clear copper orange color. Aroma is funky, apples, barnyard, stinky cheese and notes of sulfur. Sweet-sour, green tart apples, a bit of acetone, funky. Light and dry. Decent.

Bottle, cider tasting with the HBB crew. Lightly hazy gold, lively head that fades quickly. Aroma is funky, basement mustiness, rind of Brie, underlying apples. Big funk up front, lots of musty cork, lightly medicinal, with apples and honey. Very dry finish, light. I liked this, but the sweetness seemed a little clashy with the funk.

Bottle shared at a tasting at Tom L place. Very clear golden with quickly diminishing white head. Aroma of red apple, sulfur and some yogurt. Sweetish flavor, sourish, notes of red apple, sulfur and leaves, very dry. Light-bodied.

Quite a sharp dry aroma, clearly apple, apple skins, a little estery, bit not sweet. Very dry in the mouth. Slightly watery body, but it’s a 4% French cider, so I expect that. Nice dry apple skins, dried apple. Simple, but very tasty. Nicely refreshing.

Bottle at home. Pours clear dark gold to orange with a small, fizzy white head, short retention with no lacing. Aroma is phenols, medicinal, apples, straw and honey. Flavor is apples, medicinal phenols, light honey, and a dry finish. Light body and moderate carbonation.

Bottle from the Ashburn Wine Shop - pours golden amber with a big barnyard nose. I mean very barnyard. And not a good, isn’t that cute, barnyard, but a something might have died, barnyard. Taste is sweet, but god I just got another whiff. I’m done. Pass.

Bottle from Ashburn Wine Shop. Pours red with no head. Looks like that Redd’s apple ale crap. Has a funky aroma to it and not in a good way. Dry on the tongue as you would expect. Not a ton of apple here. Meh! Meh! Meh!

0.75 l corked bottle from last trip to Graz with Marko. It poured hazy yellow body with medium iszed head. Sourish riped apple aroma, corky. Sweetish flavor, real apples, bit stale, wood, cork, comes to tart palate. Quite rich in body, quite sweet for a brut, having long finish with only a bit of sourness. Very nice thing, one of the better ciders I’ve had for sure.

Poured a lovely misty full yellow body initially with a head tinged with yellow that obviously disappeared almost immediately and pierced with carbonation. Sweet gluey taste, slightly acidic, fresh appley fruity, lovely. Unexpectedly and lovely sweet appley gluey taste, bit corky. Very nice, drinkable stuff. A sweet Brut, can’t imagine what the Doux is like.
