Le cidre brut accompagne parfaitement toutes sortes de repas. Plus alcoolisé et moins sucré que le cidre demi-sec, il constitue une boisson très désaltérante qui s’adapte à de nombreux plats. Plus gai que l’eau et plus léger qu’un vin, il donne à table du caractère aux poissons, aux lapins, aux volailles et même au foie gras. Servi bien frais, le cidre brut est aussi très apprécié à l’apéritif ou tout simplement pour se rafraîchir.

75 cL bottle. Pours cloudy orange with with a small white head. Aroma is dry apple and slight sulphorish. Crisp apple fruity and slight sulphorish. Light dry and crisp apple fruity finish.

Bottle 75 cl. Clear golden with a white head. Rustic apple aroma with some cork and mold. Light body, some sweet apples and again some dusty and moldy barnyard. Some tannins in the finish. Rustic but ok. 230211

@ a tasting, pours clear yellow with a nice disappearing head, kinky aroma of over-ripe apples, barnyard, brett and winey notes, flavor is wet with kinky apple fermentation, apples peals, wood, and moderate sweetness, quite watery. Nice

Bottle at a tasting. Thanks zvikar. Clear. golden. Aroma of green apples, barnyard and manure notes and a bit of wood. Sourish flavor with green apples, some wood, earthy notes and a bit of sweetness in the background. Mouthfeel is a bit fizzy. Nice aroma, OK flavor.

Bottle at a tasting: sweet over ripe apple with weak acidity, quite rough and crude, some old wood, some lactic flavor, some rubber and leather, pretty bizzar, not a good cider.

At a tasting, as "cidre bouche brut", thanks zvikar, small head that dissapears quite quickly, a touch hazy yellow colour, dominant yeasty nose with notes of mud, leather and compost, weak sweetness tasting of overipe apples and also something lactic. A nice rustic cider that is a touch coarse.

(750ml bottle) Clear apple juice body with quickly dissipating white head. Aroma is medium sweet, apple, wood. Taste is medium sweet, apple, light wood, nominal brandy. Light body, some crispness.

BuckNaked (1230) - Tempe, Arizona, USA - JUN 14, 2006
750ml bottle, corked & caged: Pours to a goldenrod-light golden, totally clear body with a very small, instantly dying white fizzy head. It seems to be highly carbonated, almost champagne-like when you pour it into the glass. The aroma is a light crabapple, mildly sour apple skins, with some nice earthy apples and hints of aged barrel, along with just barely a hint of orange blossom (sniff hard). Very crisp, lightly sweet and sour nose. The taste is sweet apple skins, fairly acidic, with some fruity wooden barrel, fresh ripe apple, hints of lemon, orange, honey, melon, and very hidden fruity yeast. Light bodied, very spritzer-like carbonation, leads to a very crisp and resfreshing palate. Unfortunately I don’t notice any sediment in the bottle, and it seems unusually clear for a French cider, so it seems that this one is highly filtered and not bottle conditioned - both of which really take away from what a great cider can be. It’s still refreshing and a nice change of pace.
