The nose was of soft cloves and bready dough with fresh wheat that has some raw yeasty notes. The taste starts nicely crisp and very sharp with light citric elements and a soft body that benefits from a tart wheaty middle. Bananas appaer in the finish mixing with a creamy clove feel that lingers with a sharp fruity finish. This is a nice, solid, pleasant Hefe. This is also all organic. Very light tat lemon and grain aromas. Very clean flavor with minimal esters--very little banana, clove, or other spices--and more light lemony tartness with a hint of honey flavor in the finish.
