COMMERCIAL DESCRIPTION
Our third saison in the Poivre line marries the classic flavors of lemon and pepper. This dark saison is brewed with tellicherry black peppercorns,fresh lemon zest, and Sorachi Ace hops. The result is a brightly flavored saison with layers of citrus and spice.

22 oz. bottle served in a FFF teku glass. Batch #30. A: Pours a pretty dark black with a dirty white head forming on the pour. It recedes to a nice cap that leaves some sticky sheets of lace down the glass. S: The waft is big sorachi ace hops. Lemony citrus and zesty peel. Some peppery, yeasty notes with a little sweet malt as well. T: The sorachi really dominates this flavor profile. Itís definitely zesty with a big sour lemon bite to it. As a little bit of a soapy flavor to it as well. The finish as some mild, peppery spice, but Iím missing some sweetness from the malts. As it warms the peppery notes come out a little bit more which helps counter balance the Sorachi. M: Medium bodied with a medium carbonation level. A peppery, spicy finish. O: I like the nose, but the sorachi ace hops really dominated the flavor profile. It almost turned to a puckering sour lemon bite to it. As always I appreciate the creativity, but I feel that the Sorachi should have been a little more restrained to really make a cohesive beer. Serving type: bottle Reviewed on: 10-07-2012

Opaque black beer, good sized pale tan head. Palate is airy and dry with strong fine carbonation. Mellow dark malt, mildly creamy. Mild Sorachi Ace lemon cream with mellow dark malt roast and mellow hop bitterness. Almost comes off, just needs something else to pull it all together.

22 oz. bottle. It pours a very dark brown with a huge fizzy tan head. Sweet lemons and fruit in the aroma, not much pepper or spice. The flavor is sweet with more lemon candy, dirty malts and some pepper. Hint of roast in the finish. Very highly carbonated. Kind of weird.

Bottle shared by GT. Black pour with a huge khaki head. Nose is buttery. A bit of pear, roasted malt, plum, and tons of pepper. Really papery, too. The flavor is not much/any better. Roasted malt, water, pepper, and paper. Sweet pear and plum notes as well. Meh.

651mL thanks to BrewtopiaofPJ. Pours black with red highlights. Large, overcarbonated tan head. Okay retention and spotty lacing. Nose is lemon, Liptonís unsweetened iced tea. Taste is lemon, peppercorn, some alcohol heat, more unsweetened bland tea. Palate is aerated, a bit overcarbonated. Wasnít a big fan.

Aroma is yeast, spices, pepper and citrus. The flavor is spices (guessing the peppercorns are in there, lemons, dark fruit and a hoppy finish.

Bottle. Pours a hazy dark brown with a brown head that dissipates quickly to the edges. Aroma has a grassy note with a touch of lemon and backing notes of spice and light dark grains. Flavor starts with lemon and has some grass and spice with a backbone of light dark grains.

bottle, sampled after release. pours dark brown with soapy off white head. a spicy and phenolic aroma, lemony hop character. the taste is the issue with this beer as it is extremely over attenuated. I donít recall having a beer that over attenuated this much (except perhaps lambic), there just isnít any residual sweetness to carry the rest of the profile. just a watery stripped out feel to it. I know this yeast attenuates like itís on roids but this is pretty unbelievable. it doesnít taste bad though.
