COMMERCIAL DESCRIPTION
This Belgian Noël takes it’s name from Jan Baptista van Helmont (1579-1644), the Flemish chemist and physician who first discovered CO and coined the word “gas” by recognizing the existence of gases distinct from air. This energy luminary was the founder of pneumatic chemistry and also the first to bridge alchemy and early chemistry. Hats off to the man behind the bubble. Proost and Happy Holidays!

Winter 2006 bomber. Poured healthy honeyed orange with a dense cap of whitish head, especially when agitated. The aroma picked up sour lightly-skinned fruits upfront with accents of clove and vanilla.. the fruits felt overripe and overly wet, but it was alright.. sourness really held the alcohol in check. The flavor opened with lactic sourness and fruit skins with honey and lesser bready sweetness behind.. the lactic notes continued around the mouth, but never became overwhelming, and paired with some Brett-like funk and dryness.. finished with more milky sourness and Brett, cloves, and a hint of warmth. Medium-bodied and bone dry on the palate.. I’m not sure the bugs were supposed to be in there, and they most assuredly changed the character and complexion of the beer, but it was still aiight.

Bomber thanks to bring on BA. I had been wanting to tick this one off. Thanks, Barry. Pours hazy orange-copper with a small fading off-white head. Aroma is pretty nice with caramel, candi sugar, Belgian yeast, vanilla, and some fruitiness. Flavor is nice, a little bitter and boozy. Caramel malt, candi sugar, spices, and some fruity notes, maybe apple and pear. Decent palate, medium-full bodied with a good carbonation level. Pretty solid stuff overall. Amazingly drinkable for the ABV.

(750ml bottle, Winter 2007 vintage, BB 12/2009, courtesy of thirdeye11). Pours a murky gold with white fizzy head. Aroma has some fruity esters, bread, faint butter and brett. Flavor of fruity esters, yeasty, pepper, bread, butter, candy sugar and some alcohol spice. Mouth feel is medium body with fizzy carbonation. Overall, pretty tasty.

(750ml bottle via trade with BA Solomon420 best by 12/2019 Winter 2007 vintage) opaque yellow orange with light bubbles on top. Nose of raisin, rum, and candi sugar. Taste of alcohol, candi sugar, sugar coated raisins, Belgian yeast, and bready. Light alcohol on the finish with nice carbonation and fruits lingering.

(750ml bottle, Winter 2007 vintage, BB 12/2009, courtesy of thirdeye11) Pours a hazy golden body with a medium white head. Aroma of yeast, apricot, peach, and mustiness. Flavor of apple, yeast, tangy orange, white wine, some herbs, and caramel.

Bottle thanks to thirdeye11. Notes of thick belgian candi sugar, herbal tea, cookies, honey, and winter spices. Nice thicker mouthfeel. Good.

Bottle thanks to thirdeye11. 2007 Bottle with a best before of 12/2019. Pours with a small white head and a hazy golden body. Aroma is sweet, honey, biscuit, apple, cinnamon. Floral. Taste is sweet, pear, honey, biscuit. Some very light alcohol. Lively bubbles. Aging well.

Another fine Belgian from this very hip Asheville brewing company. Great aroma, great flavor. Only drawback for me is that it can taste overly sweet.
