Commercial Description:
This bold Belgian Style Ale is a blend of 4 sources of fermentable sugars. American Oak, sour cherries, and three seperate strains of brettanomyces. It takes over a year to make each batch because a beer like this requires patience, creativity, and most importantly, equal parts luck and skill. We know of no other beverage in the world that tastes like this.

Now this was an incredible Belgian. Aroma of cherries and other fruits with a little vanilla. Flavors are oak, chocolate, cherries, raisins, apples, alcohol, etc. A lot going on here. Great drink.

Bottle thanks to Fordest. Pours a brownish cloudish red. Aroma of cherries, sour, and some funk....Flavor is great, tart, sour, cherries, some funk. Mouthfeel is medium body, low, fizzy carbonation. Overall, WoW.... this is my favorite beer too date.......GREAT STUFF!!!! Every thing about this beer I loved......so to date, This will be my highest rated beer!

2002 (Red Foil Bottle #56) Rated 1/26/2005 10/5/10/5/19/4.9
Pours a stunning dark blood red, almost opaque. Small ring of dense tan head that lasts throughout. Light glass lacing. Killer aroma, medium tart cherry, oak, light vanilla and vinous red grapes. A definite brett character that is evident in the vinegar and light leather notes. The flavor, like the aroma, is a wonder. An initial explosion of vinegar is quickly cut by a vinous big red cabernet grape tartness, which in turn morphs into some very vinous sweetness. The flavors are truly outstanding. Alcohol comes into play late but provides a very pleasant warming and serves to nicely complement the dry wine like palate. This one is way better than the last one that I tried, and I gave that one a 4.4! This is one of the best beers I have ever had. Wow!
2002 (Gold Foil) Rated Dec 16, 2003 9/4/9/4/18/4.4 Very dark brown with hints of red hues. Very small head. Excellent aroma. Sour, cherry, oak, and alcohol. The flavor backs the aromas up, you are first hit with a sour cherry flavor, , then some tart apple, followed by a sweet nutty malt flavor, finally some spice flavors develop. Hugely complex and very satisfying. The body is full and smooth very red-wine-like. Not much carbonation, but that would just detract from the flavors. Kudos to Tomme and Jeff on this excellent and unique brew. I am looking forward to trying the other vintages as they age.

rerate this is as close as you can get to a perfect beer. Yumm Yumm "mmmmmmm so good poured a dark dark brown small head left great lacing. Aroma was a little oaky and candy sugar, mabye appley??? Flavor was right up there with the best of them. Tart flavor yet still roasted flavor. Tasted like cherries in the finsih and aftertaste. So wish i could get this all the time oh my."

Nov. 2007 - Thanks to eaglefan538. Wow. What a beer. Dark brown pour, next to no head or lacing. Aroma...if I smelled it, I would have thought it was a wine rather than a beer. Amazingly complex flavor of tart cherries, winelike acidity and a lot of oak. Silky smooth mouthfeel. Every drop was savored. Fantastic!

Big thanks to metallitone1 for the bottle. Nice corked and caged bottle, pours totally still. Color is woody red. Aroma is complex with vanilla, fruit, and oak. The barrel-aging seems to contribute a spicy and toasty aroma. Cherry and raisiny fruit flavors abound in the taste. Vanilla, red wine, and bourbon weave a nice pattern throughout this beer. The wild yeast is smoothly integrated into the overall flavor profile. Full, coating mouthfeel. Drinkability is limited only by the extremely low availability.

2004 bottle. Pours a dark mahogany with a small beige head. Aroma of some sweet fruit especially cherries, brett funk, vanilla and wood. Alcohol slightly present in the Aroma but it went nice with the other aromas. Taste of nice tart cherries, brett, oak, smooth mouth feel with notes of vanilla, bourbon, and dark fruits. This one is complex, and just the way I like it. VERY NICE. Thank you Eric!!!!

2003, Red Foil. Bottle #91. Clear, dark garnet with a small ring of brown bubbles. Elegant, tart aroma of sweet and sour cherries, oak barrels, blended red wine, substantial brett notes, light caramel, light smoke and a bit of light cheese. The body is pretty good, but could use a bit more heft. Otherwise, it’s creamy and smooth. The flavors are just great. Tart and tangy in the beginning with the cherries and brett working hard. In the middle, the underlying base of subtle caramel and toasted grains peak around the corner, just so you know they’re there. The oak gives an elegant, vinous smoothness before the tang somes back at the finish. The alcohol isn’t a factor considering the rather high level, but the underlying warmth extends from the mouth throughout the body and out through the ethers. The finish is long, lasting and dry. Truly a world-class beer, this is art in a bottle. There are so many good things to say about this. Yes, it’s that good! Thank you Tomme and Jeff! A perfect beer to celebrate my birthday.
