COMMERCIAL DESCRIPTION
Wine makers can’t stand Brettanomyces, most brewers don’t want anything to do with it either. Yet, there’s a group of brewers who might bathe in the stuff given the chance. To them, Brettanomyces represents a departure in the road, the proverbial point where the concrete jungle ends and real wilderness begins. For this journey, we produced a beer with a 100% Brettanomyces fermentation. The idea was sparked by a conversation with Peter Bouckaert of the New Belgium Brewing Company. The notion of a purely wild fermentation came to fruition when Peter stopped by our little brewery to brew this collaborative ale. This wild yeast ale is made from 2 Row, Flaked Oats, Carapils, and Munich Malts. We added a couple handfuls of German Magnum Hops and let the Brettanomyces Yeast loose. The beer is 6.3% ABV and is served unfiltered. The fermentation produced a ton of fruity esters with Pineapple being the most common in the beer. We have completed this exploration for now, and look forward to reaching this trailhead again where undoubtedly our next journey will begin. Gushing bottle, first pour (well, I guess it’s not a much a pour as it is a catch) was fairly clear with each subsequent pour gaining more and more yeast residue. Pretty clear light yellow colour with some incredible fizz causing it to be opaque temporarily. Despite my cold the dry grapey wine like nose was apparent, though I had difficulty picking out any further subtlety. The seltzer like fizz was extremely distracting for the first few drinks, it took a while for it to calm down. Lots of funk, brett flavour is very apparent. Pretty dry with some wine characteristics and some fresh grape.

[Bottle] shared by hellomynameis and straight from Tomme’s stash via footbalm. Never thought I’d see this one. Gushing bottle pours a clear honey gold with a large, dissipating white head. Aroma is very similar to chardonnay, very dry, grapey, just a touch funky, some florals, gravel. Absolutely awesome nose. Super effervescent in the mouth, flavor is lighter than the nose, gravelly, lightly tart, touch of florals, decent bit of funk.

Holy shit! Never thought I’d see this one! Beautiful, bright, bretty aroma. The yeast has taken full hold of the nose. Super pungent, cheesy, dry, floral, grassy, perfume. Hay. Herbal, spicy. White pepper. A slight hint of skunkiness (a’ la dank cannibis). Big, buttery, California Chardonnay as the beer opens up. Just the tiniest bit of stinky barn as well. Top pour yields a bright, golden liquid. Bright white head, lots of apparent carbonation. Flavor is quite dry, funky, musty. Cheesy. All sorts of wet earth flavors: hay, grass and leaf pile. Creamy, lightly oaked Chardonnay. White grapes. Tart, slightly old apple skin. Dried pineapple. Lush, creamy texture with lively, but never overbearing carbonation. Dry across the tongue with a lengthy, yeasty, slightly fruity, yet funky finish. This one has a lot of life left in it... not a hint of oxidization anywhere. S T U N N I N G.

This rating has been a long time coming - first of all, many thanks to cquiroga for this - I drink this beer in celebration of many things - I have had a good year - I moved to a new state, started a new job, witnessed the birth of my first child, and now, on this day, have purchased my first home - I figured this was as good a day as any to open this beer - this beer is so lively when it pours, it sounds like a rising ocean current - the nose is loaded with citrus and tropical fruit notes (mostly pineapple), with aromas of funk, horseblanket, and acidity that are much more subdued than I was anticipating - a nicely balanced and inviting aroma, for sure - despite the lively pour, the carbonation is actually fairly mild in the mouth - medium-bodied, with a kind of slick mouthfeel - fairly refreshing and clean, not at all what I was expecting - moderate acidity and a gentle sourness - quite a bit of pineapple, lemon, and orange zest - very mellow brett funkiness arrives late and lasts through the finish - a touch of peppery/warming quality on the tail end - a tiny bit of oxidation, but aside from that, it’s hard to tell its age (this one is holding up well) - quite a nice, balanced ale - not at all like the "brett in your face" ales that a lot of brewers are making these days, which is quite a nice change of pace - my son, now currently six months old, is sitting in my lap, reaching for my glass - I am having a hard time keeping him away; he clearly already has good taste in beer - yes, it has been a good year.

Finally got to try one of these last night. Pretty tasty and a pleasant surprise. Dank, sour, yet smooth and enjoyable. It was pretty old so the sour was dominant.

750 ml bottle. Shared by EDA. First bottling label- looks different than the other bottles I have had (I think?). Pours a mostly clear light copper- mostly deep gold with a nice moderate white head and some sticky lace. Aroma is fruity- light citrus, lemon peel, moderate tropical pineapple, grass and earth with a light still doughy crackery malt base very low stink or funk- still holding up ok. Flavor is light toffee, sweetness, bready, and good tropical fruit esters, citrus hints, and light brett character but tastes fairly on the clean side. Clean and refreshing with a moderate to high lively carbonation on the tongue- awesome stuff.

Bottle shared by EDA, thanks mike. Pours a lemon gold with a white head. Very dry brett, leather, and wild yeast. A bubblegum like note funky lemon and a light earthy quality. Dry musky with low acidity. Awesome!

Shared by EDA. Smells alot like green apples and champagne. Pineapplish flavor. Very zesty carbonation. Flavor reminds me of champagne a little as well.
