The aroma is acidic combined with notes of wood, brettanomyces, and berries, and the flavor is also acidic with strong notes of berries, and lesser notes of wood and brettanomyces, leading to a dry woody end. Weirdly I find the body a bit thin. I sure like it a lot better when the mother has transformed into Cuvee de Tomme :-) Papsoe (11076), Frederiksberg, Denmark Dec 7, 2006 (Bottle 75 cl) Clear, reddish brown with an off-white head. Vinous, lightly tart arome - raisin in rum. Full-bodied with very complex notes of dried fruit, rum and mazipan with an underlying tartness. Very subdued bitterness. Full bodied with mild malt flavours.The alcohol creates liqueur-like qualities. It’s massive, but having had Cuvée de Tomme I feel it’s missing something. Oakes (7032), Miami Beach, Florida, USA Aug 2, 2005 Very dark brown colour. Large head. Sweet, malty, lightly spicy (nutmeg) aroma with hints of peach and splashes of vanilla. Warm, malty, soft but effervescent body. Dark fruity overtones and alcoholic undertones. Quite a bit of sugars remain, and the finish has a tart fruitiness that while not especially enjoyable on its own, does seem to indicate along with the residual sugars a half-finished beer.
